Half Shot: Drugs and Alcohol!
One of the big dangers that bartenders and servers face each day is having to gauge someone's level of intoxication. Brad and Samantha talk about just some of the challenges involved in trying to navigate this while also having to determine whether or not that someone is also on drugs or medications.

Half Shot: Payroll!
Make sure to listen to and share all of hour episodes and half shot as well as rate and review the show.
Koop Baby: Special Guest Kavan Speck!
We're doing a little series we like to call "Brad's exes." where we'll be featuring some of Brad's favorite former General Managers. Starting this new year off with the youngest of the bunch, but certainly wise beyond his years. Kavan Speck joins us today.
We're talking about reviews from Wynkoop Brewing where Brad and Kavan worked together and getting some insight from Kavan on what managers actually consider useful from a review.
Happy Hour:

S4E25: Craft BrewHaha!
Today we are going to be talking about local breweries that have sold their souls to the devil, and the devil’s name is Anheuser-Busch. Kidding, sorta. We are talking about local craft breweries that sell out to larger companies and what that really entails.

Half Shot: Batch Dependency!
We're talking about things and stuff. Batch dependency, recipe knowledge, gate keeping behind the bar, and that it's okay to not know everything as long as you are continuing to grow in your work.
S4E24: Roofies!
Today we are going to be talking about a serious situation, one that can lead to the hospital and in some cases, death; Roofies. We sometimes joke about this topic, “Bill, see ya in three hours😘” but the reality of it is that it IS serious and not only is it serious but it’s a topic that should NOT be taken likely, as we’ll find out in the Main Course.

HAPPY HOUR:

Half Shot: Poaching!
Ah yes, the industry wide, time tested and proven backstabbing process of poaching employees from other bars and restaurants. Of course it's not always a double-crossing Judas move, but we share some stories where it's obviously a big faux pas to screw your colleagues. And of course you've got some stories to relate to this particular topic so we would appreciate some feedback from y'all with your stories. Hit us up on IG @3starspodcast.
S4E23: Pickin' on Pumpkins!
Today we are talking about Pumpkin Patches!
Pumpkin patches are no longer just about pumpkin picking. Most of them involve corn mazes, bouncy castles, go karting, haunted mazes, hill sliding, hay rides and more just to help make picking out a pumpkin more enjoyable for the little ones, and maybe to help fund the farm.
DRINKS:

Half Shot: Gum!
People are gross! It's bad enough to fart all over the place, chew with your mouth open, or pick your nose in public. But gum chewers sticking their gum to all the surfaces in the bar is just nasty. So of course we're going to talk about it.
Half Shot: Football!
A quarter of the way through the season and we finally decided to tackle the topic of football. Really just a bit of conversation around what football season means to bars, how fantasy football affects bar-going, and how much of a pain it is to be constantly changing channels.
S4E22: Breakfast BurrEATo!
We’ve all been there: rushing to work, don’t have time to make breakfast and barely have enough time to stand in line, but ohhhh those tasty, easy to eat on the run burritos just call our name.

Half Shot: Pay Attention!
We understand that when people go out to bars and restaurants, they are going for a good time and to be taken care of, but the bare minimum amount of respect toward the people taking care of you needs to be maintained. Pay attention. Know your server/bartender at least enough to say what they look like and pay attention to what you are ordering.
We definitely have some strong feelings on this topic.
S4E21: CRABS! “We got ‘em!”
Today we’re finishing up our ‘exes’ episodes with Samantha’s least favorite workplace in Pensacola, Florida.
Drinks: GABF Gold Medal Winner in the Witbier Category, White Rascal from Avery Brewing.

Half Shot: Stragglers!
You're very nice and we like you, but when it's obvious that we're closed, it's time for you to go home.
Some people don't seem to get that message and take advantage of our hospitality when they walk in right before closing and stay long after the doors are locked and we're ready to go home after a full work day.
We definitely get hyped up about the subject in this half shot, but it doesn't mean we don't love you.
S4E20: The Truth Hurts with Special Guest Peyton Garcia!
Following up on our mini-series of places we thought would be awesome to work until we actually worked there, Brad has some truth bombs to drop about the now deceased Park Tavern in Cap Hill Denver.
We were truly blessed to get Hey Denver Newsletter editor Peyton Garcia of the amazing City Cast Denver team to join us for some Octoberfest beer tasting, review stomping, and dropping her own knowledge about the service industry and what it takes to write an amazing newsletter for Bill to steal.
Special Thanks to Matt Cross for our incredible happy hour music. Follow him on IG @mattcrossetc
Half Shot: But(t) Towels!
Internally, butt towels or side towels are a hotly debated do or do not within bars and restaurants. We three seem to fall on the same side of the argument but also understand the reasoning for the other side. Let us now what you think!
Half Shot: SOS! (Service Oriented Superstars)
There are some people who are just built for service and some who aren't. This half shot we tell a story or two and talk about the types of people who really live their lives with a service first mentality.
S4E19: It Must Have Been Love But it's Over Now!
Today we’re talking about one of Bill’s exes that he was in love with… Until he actually worked there. Cheba Hut! Stoner themed sandwich shop and bar.

Half Shot: About Time!
In this business, time is of the essence, time is relative, time waits for no one, time is money. Time is all of the metaphors you can think of in a restaurant or bar.
We talk about it in many aspects as it relates to the dining experience as well as from the restaurant's perspective. Strap in and ride the time machine.

Half Shot: Auto Grat!
Automatic gratuities on larger parties have been a part of our dining out culture for a very long time. While each restaurant may treat them differently or have different name's for them, the reality is that they exist as a way to protect service industry employees ability to get paid. Unfortunately, Brian here didn't like that. Give a listen and enjoy the fun!
S4E17: All Inclusive!
Today we’re talking about the fancy all inclusive resorts and what reviewers have to say about them
If you like the show, leave us a review through whichever platform you listen on, ideally it’ll be 5 stars, but we encourage you to write your honest thoughts and feelings about the podcast, otherwise we aren’t holding true to the point of the show. Half Shot: Down with the Swiftness!
We know you expected a full episode this week but given the timeliness of the Taylor Swift tour and it's stop in Denver we just had to talk about it. The amount of revenue a concert tour like this brings to the country is enough to shake off a recession and that's just bananas.

Half Shot: Fake It Til You Make It!
No we didn't get paid to advertise, but Bill couldn't get that Bartending School Commercial out of his head while we were recording so it's become a thing.
Today we are talking about people who fake it to get the job and some of the do's and don't's when you're pretending to know how to do the job.
S4:E16 Perfectly Unbalanced!
A whole lot going on in this episode. Reviewing former employee reviews from Indeed of places we've worked. Talking mental health and maybe imparting a few tips. A lot in Behind Bars with Bill.

Changing diapers at the table, feet on chairs, and crop dusting yourself. What more could you want out of a half shot?
S4:E15 AI!
Today’s topic is an extremely interesting one. As if we don’t have enough with people leaving angry, below the belt reviews, we now have Skynet taking part, which sucks for us getting reviewed b/c these AI reviews don’t need much context at all to come up a legit mean looking review.

Half Shot: Cut Off!
One of the most difficult issues we face in the service industry is how to cut someone off when we think they've been over served in our establishment or another. In this half shot we respond to a listener's question about how we handle it, especially in their particular situation.
S4:E14 Part 2 with Chad Michael George
Every time we have a guest there is so much to talk about that the episode inevitably goes longer than expected. This one was no different except that there was so much good conversation, we couldn't bring ourselves to edit out all the good stuff. And so, here you are dear listeners, Part 2 of our 100th episode with the notorious CMG!
Half Shot: Do A Shot With Me!
One of the best and worst gifts you can offer your bartender is a shot. In this Half Shot we talk about the ins and outs and some of the ups and downs of offering shots. Be you a guest or a coworker or even the boss, it's a slippery slope when it comes to offering the treasured gift of alcohol to those of us on the clock.
S4E13: Part 1 of Our 100th Episode with Special Guest Chad Michael George!
There's just entirely too much to be excited about for this episode. We finally made it to our official 100th full episode. It was such a big deal we had to cut it into TWO parts. Special thanks to our amazing guest, the notorious CMG; sommelier, bartender, restauranteur, president of the Colorado Bartender's Guild and so much more we just couldn't fit it into one part.

S4E10: Sportsball!
With NCAA March Madness, the upcoming playoffs for the NBA and NHL, as well as the new season of MLB, it is a great time to go watch sports and everyone loves a good Sports Bar. S4E9: Bill Hates Brunch!
I mean, we all love to eat brunch, but working that shift is... taxing to say the least. When there are horrible reviewers out there it makes it even worse.

Some people say things under the guise of "just being nice" or "just FYI" but that's really just to hide the fact that they are rude and creepy. We're talking about some of the things bar and restaurant guests say that just don't come across too kindly.
S4E8: Cater To Me Baby!
Today we are talking about catering companies. Now I know that catering isn’t the first thing to come to mind when you hear the words, “service industry” or “hospitality” but believe me there’s a LOT of work that goes into catering.

Serendipity Catering (4.5), Lakewood, CO 1 Star Yelp 9/2017
Catered for Sunday brunch at Cherokee Castle. Food was horrendous. We paid for a buffet brunch, there was minimal food, and I was only 'allowed' ONE piece of bacon. The breakfast sandwiches were soggy, as the tiny finger sandwiches. Serving staff were rude and wouldn't allow us to take 'extra' food.
Jubilations Catering (5), Estes Park, CO 5 Stars, Google 3 months ago
Jubilations did an excellent job catering our wedding! The food was delicious, they were responsive/accommodating in the planning process, and the staff kept our day running smoothly. We LOVED that we got to keep the leftovers - we enjoyed our wedding barbecue for days afterwards. We couldn't recommend them more highly. Huge thanks to all the Jubilations staff!
BEHIND BARS WITH BILL:
Half Shot: Influencers!
This half shot was influenced by real and recent events. Huge shout out to Fuchsia Tiki Bar in New Paltz, NY for not giving in and for gracefully turning down the entitled influencer.
Remember kids, stand up to the bullies and don't just give away your lunch. Make them prove that they have something worth offering you in return.
S4E7: Kate Gerwin and Happy Accidents!
That's right, THE Kate Gerwin. Co-owner of 2 time Spirited Award winning Best New U.S. Cocktail Bar, Happy Accidents and Tales of the Cocktail Dame Hall of Fame Inductee. That's not all, but we just didn't have enough time to get into everything no matter how much we love to talk.

3 Stars Yelp 9/2022
My husband and I were super excited to try out a new cocktail place, as ABQ seems to be lacking. We were greeted at the door, showed our IDs, and proceeded to sit at the bar.
I was intrigued by the variety of different cocktails on the menu and was wondering how they are crafting this many. Then realized, they're pouring the cocktails from the tap... we decided to give the espresso martini a go. Due to it not being shaken with ice, the flavors were not blended well and it wasn't nearly cold enough. We decided to tab out.
Maybe we tried the wrong thing, but spending the same amount on a cocktail from the tap versus a bartender crafting it doesn't sit well with us. It's a shame as the vibe and facility are great.

1 Star Yelp
6/18/2021
As an avid supporter of locally owned and woman owned businesses, I was super bummed out by the atrocious and super disrespectful behavior of the owner. We were pumped to try out happy accidents after hearing so many great reviews of the food and drinks, which were both great! But after moving one of the tables 6 inches to be able to reach our food and drinks at one of the front tables against the window (with the help of one of the servers), the owner came over to our group, and literally started screaming obscenities at us and calling us "entitled" and "privileged" for moving her table. We really meant no disrespect, and we were there to support her business. We apologized, but the public harassment just kept going. She was so incredibly uncool and unkind. I truly hope she was just having a bad day, we all have bad days.
1 Star Yelp 8/15/2022
Put this on your hilarious Yelp review board. You make people feel bad and you're not nice.
1 Star Yelp 1/2022
Place is straight ass, drinks are too expensive and the wait staff and owner were absolutely terrible. Fuck this place. Anyone who disagrees can come fight me (owner and staff included).
5 Stars Yelp 2/2023
I would try every cocktail if I could.
The atmosphere is casual and fun. Good spot for a night with friends or a date night.
Mocktail selection is outstanding and makes everyone feel welcome. The cocktail program is very creative and unique. Nothing else like this exists in Albuquerque.
Service leaves something to be desired, and when I asked to pay cash, the waitress charged my card anyway and the credit card fee I was trying to avoid. Otherwise, I'd go back in a heartbeat
Half Shot: A Few Bucks!
When your company hosts a party at a bar or restaurant or maybe you're the plus plus one, do you bring a little cash? Well we really hope you do and if you don't we wish you would. Yes tipping is a constant issue in the US and we've talked about it before, but this is yet another aspect of the conversation when it comes to hosted parties. Give a listen and always feel free to share your thoughts with us.

Think twice before booking with Hotel Teatro
Hotel Teatro is rigid in their policies and un-compassionate and inflexible with their customers regarding any changes brought on by Covid outbreaks. They apparently do not value their relationships with their customers, with poor management focused only on profit at any cost.
It is incredibly poor management practice, customer service and business principles that Hotel Teatro could not be more compassionate with their customers in regard to unforeseen challenges and adjustments forced by the Covid pandemic on their customers. In our situation, Denver Center for the Performing Arts officially cancelled all shows of Loin King at 2:16pm on the 12/21/2021 adn given those circumstances and our lack of control over the timing of the DCPA cancellations, it was physically impossible for me to have met Hotel Teatro’s cancellation policy of noon on the 21st of December. I did what I could in good faith within a 24 hour window for notice, which was not reciprocated by Hotel Teatro.
We liked Hotel Teatro and are incredibly disappointed by their lack of consideration as to the circumstances of our cancellation. It is incredibly poor management practice, customer service and business principles that Hotel Teatro could not be more compassionate with their customers in regard to unforeseen challenges and adjustments forced by the Covid pandemic on their customers.
There are many other hotels in the downtown Denver area to consider. Think twice before booking with this hotel.
Response from Ronnie Rose, Guest Services / Front Office at Hotel Teatro
Responded Jan 7, 2022
Hi Susan. We can certainly understand why you are upset about the cancellation policy. As a lover of the theatre as well, I've had to contend a cancelled hotel/flight due to the show I wanted to see cancelling last minute and it was a headache and a half. We here at the Teatro try to make sure that our policy allows for flexibility as much as possible, while still protecting the hotel. As you may imagine, when theatre shows cancel and the hotel receives a flood of cancellations, we experience a loss of revenue that we use to pay our employees who work extremely hard to provide the level of service that you've come to know us for. That is why we do try to enforce the cancellation policy whenever possible. We are not without heart, however. Please call the hotel and ask to speak to Ronnie (the Front Office Manager) to discuss your complaint.

Half Shot: Who TF Closed Last Night?
The never ending battle of Day Shift and Night Shift begins with one question, "Yo who the fuck closed last night?" We tackle this topic as pros who have worked both the AM and PM... and sometimes maybe even left ourselves a terrible close on a clopen.
S4E5: The Awful Waffle!
Today we are going to be talking about a restaurant that is a staple to thousands of people. A place that is not just for the drunkards and elderly but the graveyard workers, broke college students or the naive, just wanting a hot breakfast. Their smothered, covered hash browns are famous and have even made it into a song we all know, greasy items are their specialty (especially if you're craving hangover food) and their staff are well versed with crazy, loud, abusive crowds. Yes, I AM talking about Waffle House or as some call it, the Awful Waffle.

I'm not quite sure why this establishment has a 4 star review. Came in on a Monday morning at about 6:55am only one booth was occupied but yet every table I went to was dirty we finally settled at one where I had to wipe the crumbs out of my seat. The waitress was less than accommodating. My waffle was covered with so many chocolate chips I had to leave some pieces because of it my boyfriends egg burrito was dripping so bad of bacon grease(the bacon wasn't drained before being put on the tortilla) he squeezed the burrito and it came pouring out. He was only able to eat half of it before giving up. Our waitress was too busy chatting with her manager that we didn't get refills my boyfriend had to go track down a to go cup and try to pay his check. Only once we went to get up from the table were we acknowledged. Not one table was wiped while I was there.

Waffle House (3) New Orleans, LA
1 Star Yelp 10/2022
Walking into this location individuals were coming out and said "Good Luck" to us. It didn't take long to understand why....When trying to enjoy a breakfast the team working was so loud and disruptive it became so disrespectful to the patrons that 2 tables actually just got up and left. There were 4 tables that needed to be cleaned while several waiting to be seated. One group of patrons cleared a table off themselves after waiting forever but ended up just leaving themselves after no one would greet them. We counted 8 "workers" just gathered in loud yelling conversation and just plain unprofessional behavior. The "manager" was no better and actually in the center of the chaos, failing to lead her team to respect individuals trying to just eat, be seated or assisted. The sad part is that they could care less. I would NEVER go back.

We have a guest today that has been on our show before. He is the Concept Coordinator Union Lodge No. 1, was in the first Garnish Games, works for Liquid Productions (who assist with Tales of the Cocktail) and is a master of craft cocktology. When we recorded with him last time we focused on what he did at Union Lodge No. 1, this time we’re going to focus on one of his other accomplishments, culinary school and how being a chef actually helps with craft cocktails.

Beautiful campus and mostly good professors. But way too expensive for what you're getting. The only reason It's getting 2 stars is because of the professors that I personally had. The classrooms were small and personal so the teachers actually knew your name and cared about your success. Other than that, you're bored most of the time and the dorms feel like a high school boarding school. Food was questionable most of the time despite it being a culinary arts school...? Don't go unless you have money to spend and close social connections. Left after one year and don't ever care to look back. Worst social experience I've ever had.

I was very excited to try out the Bocuse as I was looking to impress some business guests and had never myself been to a French restaurant that I can recollect. The dishes are very pretty looking but for the most part (what I ordered) I felt was u derwhelming. Service was slow and choppy as can be expected when you are dealing with students so no points deducted there. Everyone was very friendly. My issue was with the food. There are many restaurants in the Hudson Valley that I feel have much more to offer at least for my personal tastes. The black truffle soup I felt was too thin although the puff pastry on top was good. The charcuterie was decent but not top notch. As far as the apps go the risotto was where it was at. I had the beef dinner which was prepare nicely and tasted good but nothing to write home about. The molten lava cake was over cooked and not “molten” at all. Honestly for the price it was worth a try but I don’t believe that I would go out of my way to come back again. With that said some of my guests were very happy and would definitely come back so just like many other things it all comes down to the person. Hope this review helps!

Very expensive but lousy food. The duck was rubbery. The truffle soup was tasteless and had no truffles. Nice kids but they do not know how to cook.
