Gram’s Peanut Butter Pie:
1/3 c peanut butter
3/4 c sifted confectioners sugar
1 baked 9” pie shell
1/3 c flour
1/2 c sugar
1/8 tsp salt
2 c milk, scalded
3 egg yolks, beaten slightly
2 tbsp butter
1/2 tsp vanilla
3 egg whites
1/4 tsp cream of tartar
1/2 c sugar
1 tsp cornstarch
Blend PB & confec. sugar until mealy. Sprinkle 2/3 mixture in baked pie shell. Combine flour, 1/2 c sugar and salt in top of double broiler. Stir in scalded milk and stir over boiling water for several more minutes. Stir small amount of milk mixture into egg yolks. Combine with remaining milk mixture, cook a few more minutes. Add butter and vanilla. Pour into pie shell. Beat egg whites until stiff. Add cream of tartar. Gradually add sugar mixed with cornstarch into egg whites. Beat until stiff and shiny. Pile on pie and sprinkle with remaining peanut butter mixture. Bake until lightly browned.
