Food is our teacher, it teaches us about ourselves, how we eat, what we eat is important for our wellbeing. Being present across the table in our kitchen, is the most important executive position, in the lineage of our family line, we are the representatives of our past, present and what we sow into today is what is reaped into the future of our children we are the ambassadors to our family. The delicious of what the seasons bring into our lives, we reap in return the benefit of wellness, deliciousness and delicacy of the produce.  Braised artichokes, broadbeans and peas, if you have never tried this recipe, please do yourself a favour to taste the delicacy it gives you. The produce of this season which is the springtime, everything must be fresh only the peas frozen is okay, in this recipe that I share with you today. This recipe is a product of sweet and sourness of what the earth produces in the seasons. The experience that food brings joy and happiness is truth, try this. You will need: 4 artichokes cleaned and quartered placed in a bowl with lemon and ice water Virgin Olive Oil 1/2 a spanish onion diced 1 glove of garlic crushed 300 grams of broad beans pealed 200 grams of fresh peas or frozen 1/2 cup of mint leaves pecorino cheese lemon zest white wine vinegar of homemade white wine vinegar serve with lemon wedges, grated pecorino cheese and fresh mint leaves, eat with fresh bread, a glass of wine and enjoy! The memories that I share with you are priceless every time I remember it brings back much joy, happiness, and great wealth my way, in return I want to share with you, hoping that you feel that connection that food brings to us. It brings joy to us when we remember the past and share it with our own family and friends. I feel very blessed to have had a childhood filled with richness and one that has created a passionate business in cooking classes with my pupils and clients. Remember if you don't have the garden go to the markets or the local market and ask them to get them in for you.  Make a day of it, with a friend or your own grandchild and share the recipe go home and cook it, it will take about 20 minutes to cook, half an hour to peel, and a lifetime of memories to create. There is nothing as delicious 🤤 as eating and making a meal 🥘 one that has traveled with me for over 5 generations. You will need: red onions or St. Tropez onions, organic eggs 🥚 parsley 🌿 pecorino cheese virgin olive 🫒 oil. There are so many ways to make this quick easy meal that will keep for the day, if you are going on a picnic this is the best to take with you, it keeps and tastes delicious outdoors. You can dice the potatoes or scallop them which ever way you desire, this is your omelette.  You can learn from this and make it your own.  My gift to you. Sharing this recipe is an honour and a privilege, keeping the memory alive of my nonno is my gift. Remember to dice the onions, and potatoes, whisk the eggs adding salt and pepper, then grating pecorino cheese in with the eggs and chopped parsley, browning the potatoes and onions then placing the eggs in the pan on a hot heat, remember to place a lid for a few minutes, then turning the omelette over. (if you don't have parsley rosemary is better as this herb is all year round) it even tastes more delicious with rosemary, potatoes and rosemary are a great marriage!)  Once the omelette is cooking place it on a plate with some paper towels to absorb the oil for a few minutes, while you are doing this you can make a salad and prepare your table. What is the recipe for happiness? Believe me there really is a recipe for happiness. We search our entire life, it is there always within us it is about unlocking it, discovering it within. choice, make it a contract with yourself. implement it into your life, make room, for the seed to grow. Create a place where you feel happy and build from there. Build the bricks, like? what makes you happy? find your happy place, stop looking as you will exhaust yourself, everything you need is within. Surround yourself with friends and people who are like minded. Make it a daily ritual where you live happy. Happiness is a state of mind, spirit and body. Continue to make it a choice. Eat happy food. Happiness is weaving the moments of joy and making a tapestry of life in them. Happiness can also be found through people, spending time, with them, be mindful of what it is about them that makes you happy.  Listen to your inner self, and ask the questions to yourself.  Like:  Why do I feel happy when I am with them?  What is it about them that makes me happy?  How can I take these treasures of happiness and bring them home with me?  Build from these moments.   Finding purpose in happiness becomes your service to the universe, this is what you came here for. Happiness unlocks the door to gratitude, joy, love, kindness meekness and it becomes your natural state of living. Happiness has a partner called JOY. When we experience joy, we can actually remain in this state, regardless of our circumstances it becomes our choice. Gratefulness is a way of living. Join me as I sit with you and we read scripture, we start with Job: chapter 38 verse 5-14 Ecclesiastes Chapter 3 verse 1-15 Matthew Chapter 5 verse 13 John chapter 8 verse 12 When we take the time to meditate on God's word it frees our mind from suffering, we forget about the what is worrying us, and we focus on replenishing our soul. Time to meditate gives us freedom from self, (mind) Living in the present moment we become more relaxed and more alive, joy, love and peace become our confidants. When we take the time to meditate on God's word we remember who we are, and that He is our Father in Heaven and knows that we need him, we are His children. This method and technique is simple. We either use, the grill, oven or bbq. This technique requires no water, if you want to use oil, fat, or butter it is up to you. You can allow the juices to absorb in the food through the cooking. This will elevate your position when you learn how to cook, why?  Because its very healthy, flavoursome, and the food does most of the work! This is my favourite of all to share with you!  I so enjoy blanching, it is a method that I learned as a chef and a cook and that will stay with me forever, especially when I want my greens to be really green. It’s similar to braising but refers to food that has been cut into smaller pieces in stewing the meat it is usually browned over a higher heat, then returned to the pot with other ingredients, such as vegetables, and the liquid to cover the ingredients. When stewing any kind of older meat that is tougher than younger meat, it is important that we remember that this will require time a lot of slow time that is why it's called slow cooked. We will need to blanche it in the pan with some diced carrots, celery onions and oil, then add some red wine, and after our stock, we can use water if we don't have anything else, because the stock is already in the pan and this will create like a gravy its own natural gravy, then we can add our vegetables potatoes, carrots, turnips, etc. Cooking for this is around 2 1/2 hours or more on a low heat. or a slow cooker this is around 8 to 9 hours. Is a French termed used in conjunction with meat, depending on the different cuts of meat, slow cooking to become tender, the food is often browned first then finished either in the oven on low heat.  This is perfect for stews, roasts, casseroles. It means to cook meat with it fat and the oven with all its juices. How to sear your meat is to put it into a skillet cast iron pan that is at high temperature. There is a few things to know before you do this, first heat your pan then when it is almost hot not burning add your oil then add your meat this is the technique called searing it is not sautéing. As they are two different things we can almost distinguish the two that are like a tree with different branches in cooking. Its important that we try to do this and learn the difference when we do it a few times we will learn this technique and master it! Happy cooking Carmela

In this episode I share with you a french cooking technique called Sauté'.  It means to jump in French.  The french are the benchmark of most culinary techniques. You can trace it all over Europe, the chefs are proud and know about cooking. Sautéing is about adding the meat into a hot pan and almost searing the meat and the juices together so that when you are going to roast or stew, all the juices remain. The Benefits of Blood Oranges 🍊
There are so many recipes that we can cook 👩‍🍳 with blood oranges 🍊 today we have a new way of adding this delicious fruit into cakes, sauces, sorbets, salads, and more. Here is the recipe for the vinaigrette dressing:  1/4 cup of freshly squeezed blood orange 1/4 cup of freshly squeezed lemon juice 2 tablespoons of extra virgin olive oil 2 tablespoons of canola oil Method: Combine the juices and ingredients together, whisking the oils until all the ingredients have incorporated, place the vinaigrette into a tight seal jar in the fridge and it will keep up to 2 days. Take a few friends and enjoy a great day out! This does change the way we look at life it gives us a break from everyday and changes the dynamics of life, if we don't do this we become stagnant at life and don't enjoy it. The Mornington Peninsula has about 50 wineries that you can enjoy, and visit spend the day and relax, learn about the wine and how certain foods compliment it. Learning to pair wine and food is a great way at changing your palate and introducing new products to your viewpoint. Being open and learning is a constant challenge in life, one that we really can enjoy, in this case, it does change and transform us as we continue on our journey about food and life together. Leaving a legacy of creativity and love are very vivid in my memory, this is the reason I have created this series The Chronicles of Carmela, there are so many memories that I remember today that are alive and the feeling of each of them is so vivid, and tangible. I want to share it with you, I will be sharing moments, recipes, occasions, festas, a part of my life that are the foundations of Carmela's Cucina Class today. The recipes I share with my students and clients are centuries old, from my families chronicles and very much part of my Sicilian legacy that I have inherited. Hazelnuts remind me of a moment with my mother Sarina that I shared as a child with my brother Joe (Giuseppe). This is a real misconception that people think that if they eat healthy it is more expensive. Calculate how much money we spend on take out if we do it 5 - 7 times a week. we are looking at around 80 to 140 dollars a week, when we decide to buy fresh groceries and spend an average of 140 a week to 200 a week you will be surprised at how much you actually have brought home with you. Investing is the key crating a new mindset is the turning point, adapting to the change is the turnaround, and implementing these steps will result in the final product, a new mindset in us to transform the way we cook. We together can do our part in the environment.  There is so much we can do that will create a space in our kitchen, family, community, environment, and future by not throwing away our leftovers. make a frittata with leftover pasta, or chicken what ever. make a salad make a soup make tacos, burritos turn our dinner into lunch stirfries casseroles toasties make a bruschetta with stale bread. put stale toasted bread into our minestrone soups put them into a caesar salad create a seasonal bruschetta one for winter, one for summer, autumn and spring. make stock with left over trimmings. put our trimmings into our compost or into our garden. Cut your food into evenly sized pieces, when you are placing them into your microwave adding the larger and thicker pieces to the outside of the dish and the small ones in the middle. cover your food with a lid or microwave plastic wrap, this will trap the steam and promote more even cooking. rotate and stir food during cooking. wait until the standing time is over before you check that the cooking is complete. remember - food continues to cook even after the microwave is turned off! Easy simple steps to making a gluten-free mayonnaise Here are the ingredients that you will need: 2 egg yolks 1 tablespoon of dijon mustard 250 mis of virgin olive oil 2 teaspoons of lemon juice Method: place the egg yolks into a mixer with the dijon mustard and whisk for about 4 minutes, then slowly add your olive oil, this will go into a solid form, then add your lemon juice, and garlic if you like, and now you have a simple quick mayonnaise. In this episode of 101 Ways to Transform the Way You cook we are going to go through the pasta making method together! You will need: 2 x cups of plain flour, (extra flour or semolina flour to dust the bench) 1/2 teaspoon of salt 8 egg yolks room temperature. Method: sift the flour and salt together onto a clean work surface using your hands shape the flour into a circular mould. Create a well in the centre, place the eggs into the well and whisk lightly with a fork. Use your fingertips to gradually blend a little flour into the egg mixture, working with your fingertips, continue to gradually draw the flour into the centre, until you create a dough mixture, lightly flour the surface with semolina flour, and firmly knead the dough using the heal of your hand to firmly push down into it and then away from you, lift the dough with your fingertips, fold it back towards you, and turn the dough, keep kneading if for about 7-10 minutes, until its smoothened elastic, kneading is an essential part of this process as it develops gluten in the flour giving it a firm and tender texture. Divide the dough into 4 equal portions and wrap each portion in plastic wrap or cover with a clean damp tea towel, this will prevent it from drying out.  Let it rest for about an hour, to make the pasta more pliable and easier to roll out, you can either put it into a pasta machine or roll it, you will continually need to dust it with either flour or semolina flour. Cut them into the desired shapes and add your favourite sauce with it! Enjoy! Carmela

Start with a simple recipe and build from that.  You never in life get to the top if you don't start from the bottom, sometimes you learn more at the bottom than the top, because you are open to learn. Add your favourite vegetables, you can go to my youtube channel and watch me make an Italian Pie. My husband doesn't like potatoes so I have invented cauliflower, sweet potatoes, celery as a substitute for potato. We have a recipe that is ancient it is called Gratto derived from the French Gatto. When in the 1600's the french chefs once cooked in Sicily they created gratto which is world famous from Palermo. You will love it!!! make your own version and create it using the ingredients you like, use this as your platform to introduce you to flavours and textures that you can grow from. Salami, ham, mortadella, pancetta, these are great to add to your entree meal with salads, or if you are in a hurry, you can use them in your main meals for example make a chicken involtini with prosciutto or pancetta, add them into a lasagna or make an ancient Falsomagro (Italian Meatloaf) Here is the recipe: 600 g veal one very thin slice 100g of skinned pork sausage meat 50 g of diced salami or mortadella 250 grams of minced veal 100 grams of caciocavallo or caciotta cheese 2 raw eggs 2 tablespoons of grated parmesan of pecorino cheese 400 grams of tomato puree 1/2 glass of red wine (Nero D'Avola Sicilian) extra virgin olive oil basil leaves bay leaves 3 slices of milk soaked bread squeeze 5 hardboiled eggs shelled 2 raw eggs 3 tablespoons of tomato paste sliced brown onion sea salt & pepper water __ Method for the filling put the minced veal, skinned sausage, soaked bread, diced mortadella diced caciocavallo, parmesan and eggs in a large bowl, mix well with your hands, seal them with olive oil to assist you to mix the ingredients better. Flatten the veal slice on a chopping board placing grease proof oven paper first, cover with mortadella, spread the filling evenly over the meat, leaving a 3cm gap at one end for sealing. with your hand make a small indent parallel to the show end, with filling to the edge, and place the hard boiled eggs in the indent. roll the roast up tying it firmly using the string. brown the sliced onion in a large skillet saucepan then add a little oil. add the falsomagro roast and let it brown on all sides. Sprinkle with wine and cook on a low heat until it evaporates adding the tomato paste diluted water, tomato puree, bay leaf salt & pepper. cover the saucepan and cook on a low heat for approximately 30 minutes I would leave it for an hour adding water as you go to make it tender. roast in the oven for a further 30 minutes on a low heat. Place the falsomagro on your bench in the saucepan and allow it to settle for about 10 to 15 minutes before slicing and serving. With the extra sauce you can use it as gravy on top or cook pasta, and make a fresh salad to serve here you have 3 course, primo secondo e terso. Saluti Carmela

You will need: 125 grams of spaghetti per person extra virgin olive oil 1 tablespoon of organic butter per person sea salt pepper corns 150 grams of grated pecorino romano per person depending on taste. Method: In a large pot of salted boiling water add your spaghetti, and cook until your desired texture.  While the pasta is cooking place the pepper corns in a skillet and blanche, until they are popping you will smell the pepper, then put aside and allow to cool down. Get some greaseproof baking paper and place the peppercorns in them and fold them like an envelope, this will allow the aromas to remain in the paper. with a tenderiser bash them until they are pulverised, in a pan add the virgin olive oil, butter and pepper and heat them up, by this time your spaghetti is ready, add the spaghetti into the pan and blanche them all together taste test and see if you need more butter or pepper depending on your palate. Cherry 🍒 tomatoes are the best for making a quick Napoli they add so much flavour into the sauce because of their richness from the silky sunshine ☀️ make yourself a quick Napoli with them you don’t need any sugar. You will need: 1 tin of cherry tomatoes into a pan and heat them up, as it starts to bubble, squash them with a fork and allow the water from the cherry tomatoes to reduce. Once it is a thick consistency, add salt, pepper, virgin olive oil, and a handful of torn basil, take it off the heat and add your favourite pasta and grate some fresh parmigiano, pecorino, granda padana and enjoy. INTRODUCTION During COVID19 lockdown, I decided to write this booklet. Why? One afternoon after purchasing my groceries, I drove past the local MacDonald’s store. There was a line so far down the road it puzzled me. I understand that takeout is part of our society, I too am part of this. When I am busy and just need something quick to eat and am passing through my local takeout store, I buy takeout and take it home. Having a restaurant myself, we would not survive without the local community. The line was what really concerned me the most, it was at least a half and hour wait time. We need patience for the things we need, we seem to have the time for them. What concerned me most is that these people waiting in their cars must think they need take out. If I was that person just waiting, I would have gone home. How we think today is something that really concerns me. A real headache, do we know how to cook something simple? Are we becoming a society where we can’t even think about what to put in a meal? Is our mind so cluttered and puzzled with fog that we can’t even put a simple meal together? Credit card costs and the average person in debt is overwhelming! Have the big organisations through their commercials and social media brainwashed us to thinking that we can’t put a meal together, that we need to ring them and order? We all complain that we are time poor and yet we can wait in line for over half an hour, waste our petrol and money for a quick take away? When we could have easily put a quick healthy meal together. Time can be a cost to our health on how we think. My question to you; is it because it’s quick and easy? How many times have you thrown the take out food in the bin because you couldn’t even enjoy it? It was disgusting, dry, old, who knows how long it was in the bain-marie keeping warm? Who knows how much bacteria was even in it? And then felt sick because it was greasy from old oil? Or even got food poisoning? Let’s explore... We never had takeout when I was growing up, my mother Sarina was always inventive. The war and famine has a way of making you think, conserve and create. (They say that necessity is the mother of invention) Sarina would do little things like fry old bread, cook up a quick pasta, make pizza, or BBQ. The simplicity of life, it made us grow easy and simple, we never stressed at meal times. With the growing of each generation brings new life into maturity as we are constantly evolving. Exploring into our past can serve us, to understand how far we have evolved, it can also teach us that we may need to return to our roots as we might have strayed too far. What I desire to say is that, the simple things in life are the most important, they ease us, they make us smile. When I am overwhelmed with too many things, it’s the sun that makes me smile, it’s the bird that just flew by me that reminded me that life is beautiful. The simple meals my mother Sarina used to make remind me of that, if I just remember this, all is well with my soul, conserving the best is what makes me smile; the memory can transform into this generation and serve it well. To be a cook, one must feel, love and be infectious with the human connection that food transmits to people. A simple meal shared across the table can take away the negative feelings that one has felt through the day (a tribe of aunties, laughing outside at something funny as a child is a memory I want to share with you). Do we have any of those aunties around now? I’m sure they had many things that concerned them From memory when we were all together, all I can remember is laughter and food.
