[0:24] Host Introductions

[1:33] Guest Introduction: Judy Cho

[2:47] Bioavailability and bioindividuality. What does that mean with nutrition?

[8:43] We hear a lot about protein quality and bioavailability in animal vs plant sources. Can you tell us more about that? Is there some way to measure this or a scoring system?

[23:50] Antinutrients are a big topic in the carnivore community.  What are the main ones?  And which foods have higher amounts and why should we stay away?

[32:25] Why doesn’t everybody know about antinutrients if they’re so important? Do we lack the research studies?

[37:00] How effective are cooking methods at reducing the antinutrients?

[38:45] What are histamines?

[43:20] What foods are high in histamines? What would a histamine reaction look like?

Episode 007 - Carnivore Diet Variety with Austin Cavelli - Carnivore Roundtable

Episode 007 - Carnivore Diet Variety with Austin Cavelli - Carnivore Roundtable

How does one shake things up and create variety on a meat only diet?  Well there are many different meats and animal products and countless ways to prepare them.  Today we have Austin Cavelli @QualityCarnivore with us to help us tackle this topic. She is a nationally certified physician assistant and dietary consultant.  She holds a Master’s in Medical Sciences from Cornell and focuses her approach on food quality and bio-individuality. This means taking the “just eat meat” method to the next level with laboratory analysis and a personalized plan tailored to the patient’s specific nutritional needs and health goals.  She has treated thousands of patients with acute and chronic inflammatory diseases, including various autoimmune conditions while also helping many lose weight.  A Questions Answered: What does eating nose to tail mean? What tissues/organs should be emphasized? Why? What are the most important ones people neglect? Some people dislike the taste or even just the thought of consuming various organs/tissues. What are some solutions for people to work around this limitation but while getting the best nutrition possible? Tell us about organ containing dishes and how to prepare them - Changes in texture with different cooking methods as well as a few organ containing dishes (stews, pate, liverwurst, liver & onions) Steaks/chops - Best methods for cooking (grill/pan-seared versus low & slow, concern for histamines, concerns for autoimmune clients), lean vs. fatty depending on goals (weight loss, gaining muscle) Ground meats and burgers. Carnivore condiments - Redmond real salt, rubs, spices, what to avoid Carnivore breakfast foods/desserts - (pemmican, crisps, jerky, pork rinds, tallow ice cream, etc). Time is pretty scarce so what are some of your tips on how to eat carnivore with a busy lifestyle but with some variety? Same question but on a limited budget? Vajid: f you could leave our viewers with one message that would help them in their journey, what would it be? (just to start tying up the episode) Where can people find you and what can you help them with? BE SURE TO LIKE, SUBSCRIBE AND TURN ON THE BELL NOTIFICATION! [3:00] Dr. Pran Yoganathan Introduction
[9:00] How do you recommend that your patients eat and how do you eat?
[14:44] What are some of the main challenges with getting patients to eat this way?
[18:30] The misconceptions around fibre
[24:45] Do you have any insight on the effects of fibre on diverticulosis?
[28:56] What happens to cases of diverticulosis when you implement dietary changes?
[32:30] The evolution of our digestive tract
[34:30] Thoughts on the SCD in Seattle (Specific Carbohydrate Diet)
What changes do you notice in patients before and after dietary interventions in terms of symptoms, blood work, gut microbiome?
[42:25] What sort of symptom improvements do you see from your patients and what feedback do you get from them?
[50:30] Can you explain fatty liver/pancreas and ectopic fat deposition for our viewers. What are their long term implications? How do you see this being resolved in patients?
[58:00] What are your Top 3 foods to avoid for people to improve their health and avoid developing disease?
[1:06:00] There are a lot of misguided and seemingly unsubstantiated fears regarding red meat and cancer these days, based on poor science and guidelines with limited basis. Current projected Ontario rate of cancer is 1 in 2 over a lifetime. Part of your job is to use endoscopy to detect GI cancers in your patients. Can you provide your insight and any evidence to support your thoughts regarding the role red meat plays in this if any? What is causing this unabated and rapid increase in cancer incidence in the developed world and what we can do to prevent it as individuals and as a worldwide community?
[1:18:16] Can you get all of the vitamins and nutrients that you need from a high protein/fat and low carb diet?
[1:22:00] Are there any issues with over consuming carbonated
