COCONUT RAW CHOCOLATE PIE RECIPE

* 3/4 C raw cashews

* 3/4 C raw almonds

* 1/3 C coconut oil

* 1/3 C raw honey

* 1/2 C unsweetened coconut flakes

* 1 avocado

* 1/4 C raw cacao

STEPS:

1. Mix together all the ingredients in a blender, until consistency is as chunky or creamy as you like.

2. Scoop into a dish (you may need few drops of almond milk to thin it down).

3. Cut into small portions while is still soft. Keep refrigerated.

TODAY'S RECIPE: CREAMY CAULIFLOWER RISOTTO WITH ZUCCHINI (KETO FRIENDLY)
We love this recipe! Is ready in less than 30 minutes, serves 4 portions and is only 350 cal.
INGREDIENTS:

1/4 C. butter (or 2 Tbsp. Olive oil)
1/4 onion, finely chopped
1 Garlic clove, minced
1 Cauliflower head, grated (or 3 C fresh cauliflower rice)
1 C. Zucchini, small chopped
1/2 C. Heavy cream
1 C. Parmesan cheese, grated
1/2 tsp. Pink salt
1/4 tsp. Black pepper, ground
1/4 tsp. Nutmeg, grated

STEPS:
1. Heat up oil (or melt butter) in a skillet over medium heat.
2. Add Onion and cook until tender. Add Garlic and cook until fragrant.
3. Stir in Cauliflower rice and cook for 3 minutes. Add Zucchini and cook for another 3 minutes.
4. Stir in heavy cream, cheese, pink salt, black pepper and nutmeg. Cook for 5 minutes or until creamy consistency.
5. Serve warm and enjoy!
NOTES:
1. This is a keto friendly version, which means high fat and low carbs. Check out the options below.
2. You can replace the heavy cream by combining 1 tablespoon of corn starch with 1/2 cup of cold water.
3. You can replace the Zucchini with the veggies of your choice such as mushrooms, eggplant or red bell peppers
4. You can also add other herbs such as chopped Rosemary, Basil or even Cilantro

LIFE-SAVER NICE-CREAM BOWL

Ingredients:

1 C frozen blueberries (or the berries of your choice)

1 medium frozen banana (if using room temperature banana, just add 1/3 C of ice)

1 heaping tablespoon of nut butter of your choice (almond, cashew, peanut)

2 Tbsp hemp seed

1/4 tsp lemon extract (or 1 Tbsp fresh squeezed lemon juice)

1 scoop collagen powder

2 Tbsp of water

Steps:

Add all the ingredients into a blender. Use high speed to blend until desired consistency. Serve and enjoy!

Optional:

You can top you nice-cream with unsweetened coconut flakes, chia seeds or more fresh fruits.
