Zesty Black Bean Soup
Ingredients
3 (15-ounce) cans no-salt-added black beans, drained and rinsed
2 cups (16 ounces) low-sodium vegetable broth
1 (10-ounce) can no-salt-added diced tomatoes with green chiles, drained
1 teaspoon ground cumin
1 teaspoon onion powder
½ teaspoon garlic powder
¼ teaspoon dried oregano
1-2 tablespoons lime juice, to taste (about ½-1 lime)
6 tablespoons nonfat plain Greek yogurt, divided
2 tablespoons sliced scallions (green onions), divided
Directions
1. In a food processor or blender, add the beans, broth, tomatoes with green chiles, cumin, onion powder, garlic powder, and oregano. Blend until fairly smooth.
2. Transfer the mixture to a medium saucepan and place over medium heat.
3. Bring the mixture up to a gentle simmer and let it cook until it is warmed through and the flavors have combined, about 5-10 minutes, stirring occasionally.
4. Add the lime juice and stir to combine.
5. Divide the soup between six serving bowls and top each with 1 tablespoon of the Greek yogurt and ½ tablespoon of the scallions.
6. Serve warm, adjusting the flavor with additional lime juice as desired.
Recipe Notes
• For a chunkier texture, set some of the canned beans aside and keep them whole, then stir them in at the end of cooking.

Beginning at 9 p.m. on Friday, January 7, 2022, the Chillicothe VA Medical Center (VAMC) will perform a planned network upgrade in preparation for the implementation of the new Electronic Health Record Modernization (EHRM) system. If you need to contact the medical center directly, and unable to reach the main line at 740-773-1141 during the upgrade, please call 740-637-1632 or 740-637-1871. Veterans may also call 1-888-838-6446 with any non-urgent health care questions. In case of a medical emergency, call 911 or go to the nearest Emergency Department.

Winter Weather Safety
Winter Driving– Ensure tires are properly inflated and have sufficient tread; drive well below posted speeds and leave plenty of room between vehicles. Remember to check your battery – freezing temperatures dramatically affect performance. Watch out for black ice when driving (areas that appear dry but are ice). Keep an emergency kit in the car with supplies and warm clothing in case you get stranded!
Snowplow Safety– Snowplows travel well below the posted speed limit. Remember to be patient, try not to pass the plow and watch for sudden stops or turns.
Smoke Detectors– Place a detector on each floor of your residence, in each sleeping area and at the top and bottom of stairs – replace every 10 years.
Carbon Monoxide (CO) Detectors – CO is an odorless, tasteless and colorless gas that is a by-product of combustion. A malfunctioning furnace, improperly ventilated gas generator or faulty gas water heater are common sources of CO. At a minimum, place a detector near sleeping areas and on each level of your home – replace CO detectors every 5 years.
Explosive Gas Detectors– If you use natural gas or propane at your residence, place detectors on each floor, low to the grounds, and within 10 feet of gas-fed appliances – replace gas detectors every 5 years.
Remember to test detectors monthly and replace batteries twice a year when the time changes.
