Dr. Jennifer Kuk, PhD, is currently a Professor in the School of Kinesiology and Health Science at York University. She has published over 130 scientific papers, reports, and chapters related to obesity, health, and lifestyle behaviors, and is an author of the Canadian Adult Obesity Clinical Practice Guidelines.
Currently, her laboratory is investigating the relationship between obesity and health through clinical human studies and epidemiological approaches. In particular, she is interested in the characterization of the metabolically normal obesity phenotype and is currently working on factors that identify successful weight management in adult and pediatric patient populations. This work will help to clarify the most optimal weight management strategies for maintaining and improving health.

About Dr. Marion Nestle
Marion Nestle is Paulette Goddard Professor of Nutrition, Food Studies, and Public Health, Emerita, at New York University, in the department she chaired from 1988-2003 and from which she retired in September 2017. She is also Visiting Professor of Nutritional Sciences at Cornell. She holds honorary degrees from Transylvania University in Kentucky and the Macaulay Honors College of the City University of New York.
She earned a Ph.D. in molecular biology and an M.P.H. in public health nutrition from the University of California, Berkeley. Previous faculty positions were at Brandeis University (1968-1976) and the UCSF School of Medicine (1976-1986). From 1986-88, she was senior nutrition policy advisor in the Department of Health and Human Services and editor of the 1988 Surgeon General’s Report on Nutrition and Health.
Her research and writing examine scientific and socioeconomic influences on food choice and its consequences, emphasizing the role of food industry marketing. She is the author, co-author, or co-editor of fifteen books, several of them prize-winning, most recently Slow Cooked: An Unexpected Life in Food Politics (2022). He earned his BA at Dartmouth College (1984); his MD at the Albert Einstein College of Medicine (1988); and his MPH from the Yale University School of Public Health (1993). He completed
sequential residency training and board certification in Internal Medicine (1991) and Preventive Medicine/Public Health (1993).
Katz is the founder and former director of Yale University’s Yale-Griffin Prevention Research Center (1998-2019) where he secured and managed roughly $40M in research funding; Past President of the American College of Lifestyle Medicine; Founder of the non-profit True Health Initiative; and Founder and CEO of Diet ID, Inc, acquired in 2023 by Tangelo, an award-winning food-as-medicine company, where he now serves as Chief Medical Officer.

Training The Next Generation of Food Innovators With Dr. Jonathan Deutsch- Drexel Food Lab
On this episode our special guest is focused on shaping the future of food by training and mentoring the next generation of food industry innovators. He is Jonathan Deutsch, PhD, CHE, CRC, is professor in the Departments of Food and Hospitality Management and Nutrition Sciences at Drexel University and a certified hospitality educator.
Before moving to Drexel, Deutsch built the culinary arts program at Kingsborough Community College, City University of New York (CUNY) and the PhD concentration in food studies at the CUNY Graduate Center and School of Public Health.
At Drexel, he is the founding director of the Drexel Food Lab, a culinary innovation and food product research and development lab focused on solving real world food system problems in the areas of sustainability, health promotion and access.
He was the James Beard Foundation Impact Fellow, leading a national curriculum effort on food waste reduction for chefs and culinary educators and was named a Food Waste Warrior by Foodtank. He is the author or editor of eight books including Barbecue: A Global History (with Megan Elias), Culinary Improvisation, and Gastropolis: Food and Culture in New York City (with Annie Hauck-Lawson) and numerous articles in journals of food studies, public health and hospitality education.
He earned his PhD in Food Studies and Food Management from New York University (2004), his culinary degree from the Culinary Institute of America (AOS, Culinary Arts, 1997), and is a proud alumnus of Drexel University (BS, Hospitality Management, 1999). A classically trained chef, Deutsch worked in a variety of settings including food product development, small luxury inns and restaurants. When not in the kitchen, he can be found behind his tuba.

Understanding The Science Behind Cell Cultivated Fish With Dr. Cohen
Meat we buy at the grocery store in a few years from now may be very different from what many of us grew up with. You may have heard about cell cultivated fish and wondered what it is and how it is created. On this episode we will dive into the science of cell cultivated meat with our special guest Dr. Cohen. He is the R & D Director at Wanda Fish. He has over 15 years of extensive experience in stem cell, genomic engineering, and their applications for the Biomedical and AgTech fields. Prior to Wanda Fish, he led the research at eggXYt, focusing on stem cells and gene-editing technologies to promote livestock welfare and health.
Dr. Cohen did his postdoctoral fellowship in the lab of Prof. Rudolf Jaenisch at the Whitehead Institute for Biomedical Research and MIT, where he developed novel platforms to study human development and diseases using pluripotent stem cells. Dr. Cohen was awarded his PhD. from the Hebrew University, where he investigated the pluripotency and differentiation mechanisms of human stem cells.

About Joni Kindwall-Moore
Joni began her life in rural Oregon. As a young adult, she pursued a career in the sciences earning a degree in Botany from the University of Montana with an emphasis in botanical chemistry and pharmacology. She then went on to complete a second Bachelors's in Nursing from SUNY Binghamton. She had the unique opportunity to work in research labs ranging from soil sciences to neuroscience and ethnopharmacology.
Joni has always been passionate about healthy eating, cooking, gardening, nature, ecology, travel, and history. When her kids were little, her life turned upside-down after discovering that multiple food sensitivities and allergies were making her family sick. Most of the gluten-free baked goods and flours in the market were lacking in taste, texture, and whole-grain nutrition. Almost all of the products on the market were full of sugar, eggs, dairy and lots of gums or binders. Joni also saw the daily reality of diet-related disease in her work as an ICU nurse. So much of the death, suffering, and expense was merely the result of a broken food system so she decided to leave the bedside to dedicate to making a change in our food sector.
Joni was able to create incredible grain-based foods from whole grains that were naturally vegan and gluten-free. She set out to build a brand that would not only impact our Nation’s food system by making it healthier and inclusive, but also to help to combat the food and agricultural practices that contributed to the current epidemic of allergies in the first place.
