Shrimp Lessons and Satirical Satan
Welcome back Boo Crew! In this week’s episode we’re finally to our BBQ main course, Shrimp Kabobs with a spicy mango salsa. First off, let me be clear and say this was my first time ever buying shrimp and holy hell, learn from my mistakes. Pro tip: the higher the shrimp count, the smaller the shrimp. For kabobs, you want some decent sized shrimp, so buy a lower per bag count if you’re buying from the freezer section. Anywho! I sautéed these shrimp in some EVOO with some minced garlic, S&P, and some red chili flakes for a few minutes on each side, then popped them on some skewers. I alternated between shrimp and bits of chopped bell pepper. Once assembled I put them back in the pan to chat the peppers and drizzled some honey on the skewers. For the salsa, I combined chopped mango, two small cored jalapeños, some purple onion and some chopped tomatoes into my food processor with some lime juice and a touch of EVOO and some S&P. Processed until I got the desired consistency then plated it next to my shrimp kabobs and garnished the plate with some lime wedge. A bit of work, but so worth it! Shrimp Kabobs
Fresh or frozen (thawed) shrimp
EVOO to drizzle
Seasonings to taste:
S&P, red pepper flakes, minced garlic
Fry in an oiled skillet for a few minutes in each side. Assemble skewers, fry one more minute each side to char bell peppers/onions, and add a drizzle of honey for a little sweetness.
Spicy Mango Salsa
1 chopped mango
2-3 of preferred tomatoes
1 purple onion
1 habanero or 2-3 jalapeños, cored
Lime/lemon juice to taste
1 tsp EVOO
S&P is desired
Process until desired consistency is achieved. Plate and serve!

Unexpected BBQ guest and The Burg Eltz Remix
Welcome back, Boo Crew! In this week’s episode we’re keeping our BBQ theme going with some Pineapple Rice made by Bree. The perfect blend of sweet and savory. 10/10 would recommend according to my husband, who has requested she makes more sometime solely for him. Rice, pineapple, bell peppers, cashews and a blend of seasonings come together to create a filling, well rounded party dish. This one’s a definite winner, and an amazing alternative to typical BBQ food fare. Get it while is hot! As for our story, I may have made a bit of an oops, so we’re getting a refresher of the Burg Eltz Castle that Bree covered in season 1! That’s episode 34 in case you wanna check that one out. We did learn some new info in this episode as well though. As we said in our opener folks, ‘ensuing hilarity’.

2 Tbsp butter
1 small head green cabbage ( chopped into bite sized pieces
1 lb kielbasa (diced into coins)
1 white onion (diced)
1 package egg noodles or as much rice as you desire
Melt the butter into a pan and on low heat, caramelize the onions and cabbage. Push vegetables to the side when they have reached the caramel color and are soft and place the kielbasa coins in the center to cook. Incorporate both meat and vegetables when the kielbasa is cooked. Serve over egg noodles or rice.

Human Cheese Plaques and Sleepy Hollow
Welcome back, Boo Crew! In this week’s episode Bree is taking us to a place many of us have heard of before, Sleepy Hollow. Do you know the true story of Sleepy Hollow? There were definitely some facts she shared that I didn’t know. From Disney to Johnny Depp, we talk about it all! For our dish, I re-made the Tomato Soup from episode one. Tomato Soup
Desired amount of tomatoes. I used some big, beefy boys as well as some Romas and some grape. Cut the tomatoes in half, throw them on a baking sheet. Halve an onion, throw that on the sheet. Halve a bell pepper and take the seeds and stem out, then throw that in there. Coat lightly with olive oil and desired amount of seasonings. I use thyme, basil, rosemary, salt and pepper. Rub all that into the veggies. Next, grab a couple heads of garlic and chop the tops off. Wrap them in some foil and pour some olive oil on the top. Add salt and pepper to the tops of them and then fold the foil over top. If you have room, you can add these amongst your other veggies on the sheet or just pop them in the oven solo on the rack. Bake at 400 degrees for at least an hour. Once done, add everything to a blender, food processor, or if you only have an immersion hand blender, add it all to a big stock pot. Blend until desired consistency is achieved. Add a carton (4C) of veggie or chicken stock, desired amount of heavy cream, I used a little less than a pint, a few fresh basil leaves and blend again. You may also add any more salt, pepper, or any other amount of whatever seasonings you’d like a stronger flavor of. Pop it in a bowl and serve with a drizzle of heavy cream, olive oil, some shredded Parmesan cheese and a fresh little basil leaf.

PSL Pasta and Athens Asylum
Welcome back, Boo Crew! In this week’s episode we’re headed to Athens, Ohio for a story on the Athens Lunatic Asylum. As usual, the reasons one could be admitted to the asylum back in those days were vast. Female “hysteria” and masturbation could land you in there. Or you could simply be dropped off if you were unwanted, or couldn’t be cared for. We take a look at the history of the building as well as the asylum’s current residents. For our meal this week, Bree made Pumpkin Pasta. I was skeptical at first, but a creamy sauce and unique flavor profile made this dish one of the best I think we’ve had. It even has me trashing the Midwesterners’ Butter Noodles that are a staple at all our Thanksgiving dinners, so I can swap in the pumpkin pasta! All this and more in #41! Back in the ye old days, typically in Ireland and Scotland, Changelings were were thought to be fae-like creatures who kidnapped human children and left a Changeling child in it’s place. Anyone acting in a manner thought odd by someone else could easily be accused of being an imposter. Zucchini Fries/Eggplant Chips
I used 3 small/medium zuccs, and 1 medium sized eggplant. Cut into bite size fries/chips and do your dredge method. Seasoned flour, then your egg/flax egg and finally some seasoned bread crumbs. Let sit for a few minutes and do another egg/breadcrumb dip if you want/need more crisp. Throw it in your air fryer on the default temp setting for 10-12 minutes and voila! Serve with your fav marinara sauce!

Pizza Stuffed Mushrooms (Check it out on our Tiktok!!!)
Set your oven to 350. Get some big portobello mushrooms and pull off the stem. Next, use a spoon to gently scrape out some of the insides/gils. Cut up desired toppings. On a baking sheet, place your mushrooms, then add sauce of choice. Add your toppings and some Italian seasoning. Add cheese if desired. Bake 10-12 minutes or until ingredients are softened and cheese is melted. Top with more seasoning.

Troll Party In The Woods

Rice & Herb Soup
2 containers low sodium chicken broth
2 packs Uncle Ben’s instant Jasmine rice
Half a small bag baby carrots
Desired herbs/seasonings to taste. I used thyme, rosemary, s&p, garlic and onion powder.
Throw your stock, carrots and herbs in a pot and bring to a boil, then reduce heat and simmer for 40ish minutes. Once your carrots are as tender as you want, throw that rice in the microwave following it’s directions. Add rice to the pot and give it a few minutes to soak up some broth, then serve!

Fancy Farmhouse Dish and Midnight Meat
Welcome back, Boo Crew! In this week’s episode, we got a little experimental with our dish! Bree threw together an elevated version of a Midwestern snack. If you weren’t aware, a lot of us Midwesterners enjoy cottage cheese with cut up tomatoes on top. Bree added some fresh basil on top, along with some cracked black pepper and a balsamic oil reduction. It was SUPER delicious and would also be great with some mozzarella cheese to make it similar to a caprese flavor. Even sautéing the tomatoes with some oil and garlic would be yummy. As for our story, I cover the Acheri. This is a female demon found in both Native American and Hindi mythology, possibly due to a mishap with terminology. Granny Annie and Silent Hill Dash
Welcome back, Boo Crew! In episode 25 we’re headed off to Oregon for a look at the Geiser Grand Hotel in Baker City. Once a lavish hotel for the elite of the time, it didn’t take long for a rowdier crowd to move in, leading to some great ghost sightings years later. This gem fell into disrepair for years until a couple bought it in the 90’s and restored her to her former glory. As for our food, Bree made a delicious Jalapeño dip for me to try. It paired well with the main meal I made, featured last week. A beautifully creamy dip with minimal zing of you know how to pick and prepare jalapeños properly. Ramen Museums and Chilling Cursed Forest
Welcome back, Boo Crew! This week is a bit of a heavy one, and for that reason I’d like to make you all aware that this is a *Trigger episode. Bree makes a Japanese ramen dish for us, that was super delicious! She also gives us some facts about ramen and talks about how many different types of it there are. My story is also from Japanese culture. I head to an area at the base of Mount Fuji, the Aokigahara forest! Known by a few different names, this forest has gained quite a bit of notoriety in the last few years, especially since it was turned into a Hollywood movie starring a Game of Thrones alum. I must warn you all though, this episode can be upsetting to some listeners. Ramen info
Broth: 40 oz of favorite broth, 2 tbsp soy sauce, 2 tbsp sesame oil, (rough measurements ahead) 1 tbsp of garllic powder, onion powder, and umami seasoning. 2 tsp of ginger powder. Combine and simmer for at least 40 minutes. If you are using bok choy, add it to the pot in the beginning of the simmering process. Add noodles in the last 5-7 minutes of cook time. When serving be sure to add all your favorite toppings like chicken, pork, tofu, boiled egg, wilted spinach, and even nori!

Fruit Salad
I bought some pre-cut strawberries, some pineapple, oranges, purple grapes and a kiwi and rough chopped all of that and threw it into a big bowl. I didn’t measure anything, just based it off of how much I wanted to make. Then I mixed in a desired amount of Plain Greek yogurt, a heavy drizzle of honey and some GF granola and mixed it all together. Top with some fresh squeezed lime juice, and you have a healthy, colorful, sweet dish you can take to any gathering and not feel guilty about what you’re eating!

I accidentally bought cucumbers instead of zucchini, so I replaced that with slices of Idaho potatoes, and I also didn’t use the bell pepper and onion sauce, or onions for the stand alone veggies. So mine was just eggplant, yellow squash, roma tomatoes and potatoes. Store bought sauce underneath the veggies, dried thyme and rosemary added to the sauce. Then veggies, more sauce (because I like a lot of tomato sauce), then a few cloves fresh minced garlic, and more rosemary and thyme. Baked in a 9x13 glass dish, uncovered for 1 hour on 375 degrees. Make sure not to pack the veggies too tight, otherwise they won’t cook thoroughly.

Tex Mex Fruit Sandwich and The Knight of Rooby Roo?
Welcome back, Boo Crew! In our 16th episode, we’re headed off to Rhode Island for Bree’s story about the Belcourt Castle! Very Scooby-esque! But first, Bree samples some BBQ pulled pork, vegan style. This meal was thought of with families on the go who are either vegan/PB or just looking for more ways to incorporate a plant based diet into a hectic schedule. I grabbed a bag of BBQ flavored, pre-shredded jackfruit from our local grocer and a box of gluten free macaroni and cheese. The goal was backyard BBQ. The jackfruit can be thrown in the microwave for up to 2 minutes and thrown on a bun for a quick sandwich and we all know macaroni doesn’t take too long. You may also be able to find jackfruit in a can. Ask your local grocer if they sell it and give it a try!
