Emerald Thomas is the owner and creator of Southern Belle Remix. When Emerald was diagnosed with Hashimoto's Thyroid Disease (an autoimmune thyroid disease) in 2013, she noticed that there was a correlation between the foods she ate and how she felt. She decided to eliminate the foods that made her condition worse, which was gluten and dairy. But Emerald changed the game with it or remixed it to create the most delicious gluten and dairy-free recipes.
Emerald is also an author. She wrote a book entitled "Protecting your Peace". And it's amazing.
