Do you find your plant finances to be a black box? Are financial statements accessible and transparent? Do you know what to measure or how to tell if you're making money?
Join us today, as we interview plant finance and project management expert Dane Creighton about his experiences as a new plant manager and how we recommends wrapping your head around your financial statements.
This leadership series is going to change your life.
Let's get real on what it means to create results. It doesn't mean what you think it means. It means showing up as who you are meant to be and getting ish done till the result is created.
That is it
It's no harder or easier than that.
I have been doing a lot of thinking and coaching on leadership. And, I've come to the conclusion that a lot of people are failing at it in our food plants...not because they aren't trying...but because they are trying too hard.
What? Heresy...I know.
Here's the thing though...leadership is a learned and learnable skill. I just think we've learned the wrong lessons. I think people are making it way too hard and are suffering a LOT as a result.
This series is designed to start to fix that. We are going to start with how I help my clients set their course of direction and then talk about the process we use for figuring anything out. Finally, I am going to introduce you to a new way of thinking about how to make any decision.
This week, we talk to Travis Stockstill, AKA American Butcher!
Travis is an expert butcher and production manager who has overseen several high-complexity plants in his highly accomplished career, including Ready-to-Eat facilities. He shares some of his personal experiences and gives advice to food production managers of all skill levels.
One of the most awesome things about my life is that I am a graduate of Wellesley College. Being in the "W Network" as we call it brings certain advantages. Not only can I find alums almost anywhere in the world doing anything that I might have a question about, we also have professors that do very interesting work and are more than happy to talk to grads...even ones decades out!
Meet Professor Robert Paarlberg, a political science professor and researcher of ag policy. He and I discussed his new book "Resetting the Table: STRAIGHT TALK ABOUT THE FOOD WE GROW AND EAT"
This discussion was fascinating because we are absolutely more alike than we are different and there are so many solutions on the table for feeding people...not just calories...but food.
More about the book and Professor Paarlberg here

Have you ever walked into a new management job and wondered, 'Where the heck to I start?' If so, this episode is for you.
In this week's installment of The New Plant Manager series, David discusses the first part of the New Plant Management Model, the Organizational Gap Analysis.
In other words, we find out about your company's reporting structure and determine what you already have for a robust personnel management program, and what you need and then how to bridge the gap. It's the first steps to stepping into your new role as a manager in a new plant.
In this week's episode of the podcast we are going to take making money as a food producer even further than the beliefs we talked about last week.
Beliefs are first.
Next we've got to talk about dreaming big...how much money do you want to make?
How do you set a goal without killing yourself?
This episode of The Food Safety University Podcast is the first of a new weekly segment called' The New Plant Manager' with David Zarling. David is a Senior Associate at Dirigo Food Safety with a background in production management, plant management, and all levels and forms of butchery, including USDA inspected field slaughter.
In this series, David will discuss everything you need to step into a plant management role or assume the GM role in a plant new to you. We'll discuss a model that lets you confidently become the manage that your team, your shareholders and you need you to be.
Great news all, this is another peak behind the scenes look at Dirigo Food Safety and what we are doing, where we are going and how we are run.
David Zarling, plant manager, butcher and leadership coach extraordinaire is joining me today to talk shop. And, we have some pretty cool announcements for the podcast.
Listen up and share, because we are doing all sorts of good things around here.
Why are you making food? Why on earth are you putting all this effort into your business?
In part 1 of our series I am going to tackle this issue head on with you.
These episodes are going to make your THINK. And then they are going to make you GROW.
You know who LOVES a well executed food safety plan? Your future self. The one who can deal with any problem thrown at them because they've got a great foundation.
But how do you even develop a relationship with that person? Who are they and how do you think about them?
Are you arguing with reality and spending your time re-litigating the past? Many clients do this frequently. It makes total sense because...that's how you were taught to think.
But what if you could stop doing that. What if you could stop focusing on the stuff you can not change, and focus on the stuff you can.
That's what happens when you decide who you want to be in your business, before you decide what you want to do.
Who before how...always.
Today, I am bringing my coach, the wonderful Maggie Reyes, on to the podcast to talk about communication.
Maggie brings a world of experience to the topic of communication, from her position in HR in the cruise industry, to being a life coach for Type A women who are creating better marriages, and now she's bringing it to food manufacturing!
Because food manufacturers are people...who need to communicate with other people.
All of Maggie's goodness can be found at maggiereyes.com and check out her Marriage MBA program
Calibration...what a thrilling topic!
It's pretty rad though that there are all sorts of devices out there that measure whether or not our food meets our critical limits though!
But the deal is...you have make sure those devices are working. How you ask? Well, good thing you can find out.

Competence...Does your workforce have it and do you know?
And for that matter...why is it important?
A competent workforce is your key to saving time, money and a lot of energy.
So how do you get a trained and competent workforce? Listen in!
In talking with so many clients what is really obvious is that they are looking for really big wins...I get it...big wins feel good.
But it is the small stuff, done right, every day that makes the biggest difference
When my clients look at document control they often cringe. It's boring, it's hard, and it shows little result.
Well, no kidding is sucks if you approach it like that.
What if your document control process was the key to the efficiency of your food safety system?
I am a total Gen Xer and sci fi fan...and as such...I love Hitchhikers Guide to the Galaxy
And so my friends...think of this episode as having nice friendly red letters that say...Don't Panic
Look, I know it is easy to panic in a crisis. But you can over come that. Listen up for how.
And if you want to do all your planning the easy way...go download the 12 Steps of HACCP to get started

Making sure that the equipment you use to monitor your product and process is incredibly important. There are certain things you need to do to make this work.
Listen in for how to set up your calibration program.
This is a great nitty gritty episode for everyone who is wondering the HOW of food safety, so you'll want to take notes.
If we have learned anything in 2020 it is that keeping our facilities and our people safe is pretty tough. We've got different competing needs that we have to balance and it is anything but easy.
Let's make it a little easier. This episode is going to cover what to do to get your facility or farm secure as it can be.
The approach, as our approach to all things, is through the HACCP planning process. Download the 12 steps of HACCP now by going to www.foodsafetyuniversity.com
There are 3 statements that make training effective.
And I am 99% sure you don't know what they are, or why you need to agree with them.
I am also 99% sure that every single corrective action you write has Training as an action.
Let me be the first to tell you...you are doing it wrong.
More training isn't the answer. Better training is.
Truly, you can't talk about Sanitation too in depth here on FSU. Today I talk with Leon Witham, one of my favorite people in food safety. Leon brings an incredible level of dedication and service to our industry and his customers. There is probably almost no question on sanitation he can't answer.
This is the most 2020 thing to talk about.
How we dress and how we protect ourselves and the product at work is a learned and learnable skill.
You just need to DECIDE to learn it.
You need to make the choice that doing PPE and personal hygiene the right way, every single time you do it, is an activity worth doing.
In food manufacturing you need a Customer Complaint program. It's something you've got to think about and document. I see so many of my clients freak out about them that they routinely get caught short in all the things they could learn from them.
If that's you...here's the podcast that fixes that.
Corrective Actions and Preventive Actions...
What are the steps? What do you need to think about?
Because for your program to be effective...you need to have harder conversations than you are having. You need to dig deeper and GO THERE. Stop pencil whipping this stuff. Use your mistakes to get better.
In the 6 step framework I introduced in Episode 103 I said it can be used for anything. Well, today we are going to deploy it for how to keep on keepin' on as COVID is our reality for some time.
Today's episode will go over who is on your response team, what the scope of the problem is, who solutions apply to, what the heck the solutions are and the steps for implementation and continuous process improvement.
This is a very important episode folks. Tune in, take notes and think.

Do you do what you say you are going to do and is it helpful...
I am sorry to say that it isn't enough to just write your HACCP plan.
You've got to make sure it works.
And you've got to make sure all the SOPs that support it work to.
You do that by doing a 90d validation.
Learn how and where you can get more help on this episode.
If you are a company trying to pass an audit...tune in because you need a food fraud vulnerability assessment. And I got a program for that.

When I last covered testing and environmental monitoring we talked a lot about the how of what you do...
Today we talk about the why...
Doing product testing and environmental monitoring well gives a lot of insight into your food safety culture. Get on board with how to do the testing and what it means for your company.
How much time do you spend in preventive maintenance...and how much in urgent and emergency maintenance...
Next question...how awful does all that emergency maintenance feel. Awful, right? What if you instituted PM and made this all suck less?
What if your maintenance dept had FUN at work once in a while? Imagine how much more they'd get done my friend!
Join my on this week's episode live on The Proofing Box and let's talk about how to make that happen.
I say HACCP, you say HACCP...and we mean different things...
Crazy, I know. But join me for this podcast and learn about the vocabulary! Let's clear all that up so that you can get your plans written!
You food changes lives.
How do I know this? Because it's changed mine. Yours, my clients, the whole smallholder food movement...it changes lives.
And changing lives is tough work and requires a lot of you. And when the going is rough, I want you to think about the opportunity you have to be a product of your product. I am going to tell you how that process works with me, and how you can incorporate that into not only your every day work, but your SOPs and how you work in your business.
We talk a lot about goal setting around here and it is easy to go down the rabbit hole of attachment to goals.
Commitment though, is much more powerful.
Both can be useful, but commitment will get you everywhere, where as attachment doesn't.
Tune in to learn the difference.
And when you are ready to commit...book a call.
Let's diving into your relationship with yourself...what are the things you build your life on? Are they what you want to bring forward into your future?
The foundations of freedom and opportunity are pretty simple...
When we work to understand these we build assets. PERSONAL assets....
1) Your relationship with yourself
2) Your relationship with others
3) The products of your life
4) The processes of your life
5) The capital in your life
Where are you with the personal assets in your life?

We've gone through the five pre-steps of HACCP and now we are on to the meat of the matter as it were.
And here is where everyone gets stopped. Stopped in confusion and overwhelm and regulations and AIGH ISN'T THIS SUPPOSED TO BE A CCP.
That overwhelm all comes from a fear that you are going to do it wrong and nothing is going to work and all your efforts will be for nothing.
Stop. Breathe. I get it. I've been there. I was once new at this too.
Listen, you aren't writing the Bible or any other Holy Book. You are writing a food safety plan. It is ok if it isn't right on the first or even 10th try. It won't be. Write it anyway. Write it in fear and loathing and failure. Know that is what you are going to feel when you write a hazard analysis. Plan on it. It is the tax you get to pay for building the business of your dreams.
Branding. Live by it.
If your brand ain't working for you, it ain't working.
Join us as I chat with David Lemley of Retail Voodoo on how to get your brand squared away.

If you've got questions head on over to The Proofing Box and ask 'em!
A verified Process Flow Diagram. You either have it or you don't. Many is the time I've walked through a plant and said "did anyone actually LOOK at this?" because "umm, no" is usually the answer.
Let's fix that shall we?
Are you ready to create results? Leaders create results.
What would your life look like if you stepped into leading yourself?
It sounds simple, and it can be. But, acknowledging and stepping into your own leadership is a profound journey.
Local food needs leaders, it needs you.
Join me on this journey, won't you?
In this episode I go over the STRIVE questions and the thought management process that I use to create trust and credibility. It doesn't matter what you are selling, you need to manage your mind to achieve the results you are looking for.
Join me with Charlie Tidd (my awesome brother) as we talk about managing inventory inputs.
This episode is going to change everything about how you see all that stuff stacked up in your walkins, your coolers and freezers.
Step 3 of pre planning for success is understanding your customer and understanding how your customer consumes your food.
The bigger question here is how are you providing value to your customer, and then tying that value to your food safety plan.
An encore presentation of our 5s discussion with Charles Tidd.
Join us this week on the podcast where Dr. P and Charlie Tidd talk about the basis of 5S in food manufacturing and how they can help you in your own facility.
You've decided to embark on a food business.
Now you need a food safety team.
Food safety is a team sport!
Listen in for the history of food safety planning, how we got here, and how to start on your documented food safety plan.
How do we look at the obvious results?
Why do we look at the obvious results? Because telling ourselves truth, even if it is optional thoughts, creates clarity and allows us to manage our minds, which is the KEY asset in a business.
When we serve up truth to ourselves, we have our own back. We learn that we belong to ourselves, and so many of us have a story of not belonging. Being vulnerable to the truth in our lives allows us to decide.
One of the best tools in my mind management toolkit is questioning assumptions. What assumptions do I make in around my thoughts? Asking this question takes thought work to the next level and can create massive breakthroughs in your life.
Learn the 5 questions I ask myself during my own self coaching and work them into your life.
I've gotten a ton of questions on ASF. Well, here are some answers.

When we choose anger over empowerment
When we choose to avoid food safety planning by being angry it costs us a LOT
It costs our health, our wealth, and our relationships.
What is your inaction or your anger costing you?
This is one of those topics where people just simply tune out. They know that they are supposed to do it, and they just don't.
Why is that?
Cause it is boring
Cause it is hard (not really)
Cause they are afraid of it
Let's clear that up shall we?
Food safety is all about action.
Often times, we act first, believe second.
So what are those actions? How do we actually mitigate risk?
What does that mean for leading and serving ourselves, our teams and our customers?
What could be more fun for a food facility than doing internal audits? Well, I love to do them, and now you can to!
But seriously folks, internal audits are the difference between the results you have and the results you want.
Why? Because if you decide to do the work, they allow you to show up to your product, process and people.
Be brave my friends.
Come learn how to serve up truth with internal audits.

In this episode we talk about the reasons we over eat and how to bring awareness to your eating process.
And guess what? Feeling your feelings is the trick to everything.
You’ve heard me talk about the importance of lean processing before on the podcast and how following this methodology helps eliminate waste in your facility. But today we’re going to talk about the importance of one of those wastes specifically:
The waste of human potential.
Yes, you pay your employees to do a job and give them the tools they need to do it, but I’d like to ask you an important question:
Are you getting the best work out of your people?
If you don't engage an employee’s knowledge and expertise, how do you expect to improve the process? These people on the front lines are the most capable at identifying problem areas. And more importantly?
They can develop the solutions to your problems.
Join me on the podcast this week where I talk about the importance of truly engaging and utilizing your employees so that you can eliminate waste and create sustainability and profit.
Join me on the podcast this week where I talk about the unharnessed power of your beliefs. And how when you believe in the power of the future—YOUR future—you harness the power to decide who you want to be and how you want to grow your business.
Join me this week on the podcast where we’ll talk about how scheduling weekly epic fails allow you to become familiar—and ok with!—failure so you can reach your goals faster. Get ready for an amazing episode, folks!
What if decisions were neutral?
How fast would you make decisions if you knew that your life was going to be amazing no matter what? That you could do anything given any decision that you make?
You'd make more money (indecision is the primary way that my clients waste money)
You'd feel WAY better
You'll sleep better because you'd know that you were doing it all just right
How? Because you'd have decided that the way you decided, was just right for you.
Don't fall into the trap that it is the result that tells you if the decision was good or bad. Because it isn't. It is what you THINK about the result that makes it good or bad.
So go ahead. Make decisions. It's amazing.
You can live in your future, even when you don’t know the how. Crazy ehh?
Here's what we are going to do today:
1. Decide on your impossible goal
2. Write it down
3. Schedule actions over the next month where you’ll fail forward
4. Coach yourself on what happened
We are in business, when you fail forward, you are going to learn so much and do everything so much faster
you’ll get to profit faster
you'll have less anxiety
you'll sleep better
you'll learn to stand in discomfort in service of your goal
you can meet your goals without knowing the how
Dr. Pfannenstiel appeared on the Exemplar Global Food Safety Expo to teach STRIVE.
This powerful tool allows anyone to solve any problem at work by addressing the root cause of problems...our thoughts.
What if you could track things from your customer to your supplier?
After this episode you are going to know to to know where everything is!

Efficient business where people are clear about what’s being made, where they are going and what they are doing are businesses that can live into the future.
Buffering is when we use external things to change how we feel emotionally. It’s something we do to keep from fully experiencing our lives, to hide from reality, to procrastinate, to not show up and face the music and face ourselves and our feelings. We don’t want to face the truth of our lives because we don’t want to experience any type of negative emotion. We feel entitled to feel happiness and pleasure all of the time. We feel entitled because we have been TAUGHT that we are supposed to be happy all the time.
When we aren’t happy all the time, we think something is wrong. And then we buffer to stop feeling like something is wrong in our lives. But, when you stop buffering, you move to the 50:50 balance that most of life is. You stop using your limited mental energy on the false pleasures buffering provides and instead use it on what drives your life forward and gives it meaning.
What if we could stand in discomfort and make massive progress? People who are willing to stand in discomfort are able to do anything

You will show up to the world the way you were meant to

Figure out if you did it

Stand in a place of clarity and know your truth
Be more calm and centered and know your own discomfort
Being sure of yourself is incomparable, you will build what you were meant to build when you create clarity in your business and in your life.
