Ep. 23 - Mark Noguchi (Chef Gooch) - Talking Life, Family and what defines success as a Chef with Chef Gooch
In today’s show, we sit down with the one and only Mark Noguchi who is lovingly known here in Hawaii as Chef Gooch. For people outside of Hawaii, which is probably most of you listening, Chef Gooch is the man here. He’s one of the faces of the local culinary scene and a true to life celebrity chef for all intents and purposes. At one point in his life Chef Gooch was operating 3 restaurants and a catering business here in Hawaii. He’s a graduate of CIA and has worked in some of the best restaurants in Hawaii. He’s also very well known for his love of saimin, Hawaii’s local version of ramen. So much so that he even has a local TV show about it called Saimin says which was broadcasted statewide on tv and on all Hawaiian Airlines flights. Currently, Chef Gooch is operating the Pili Group with his wife Amanda as well as teaching food and Aina based learning at Punahou, the acclaimed private high school on Oahu which has many famous alumni including Barack Obama. Gooch is passionate about food and life, and I was so glad he agreed to come on this podcast. Just a heads up, we actually talk very little ramen or saimin here, its more a conversation on life, making difficult decisions, family, and what success means as a chef. But I think this is still an episode you’ll all enjoy especially if you’re interested in pursuing a career in the culinary world. Sarah Gavigan of Otaku Ramen has become a true powerhouse in the American ramen scene and is one of the pioneers of American style ramen. Through her mission of bringing ramen to the ramenless, she has grown the Otaku group from a popup to multiple Otaku Ramen locations in Nashville Tenessee.  In this episode Sarah talks about how she got her start in ramen, how to run a successful ramen shop in the US, and her thoughts on how restaurants will need to navigate a post COVID world. Ep. 20 - Ivan Orkin (@ramenjunkie) - Ramen Lord and I sit down to talk with a Legend
Ivan Orkin is someone who really needs no introduction to ramen fans. He's a legend. As a foreigner, he opened Ivan Ramen in Japan and quickly rose to stardom there. After years of operating his shops in Japan successfully, he returned to the US and opened Ivan Ramen in NYC to critical acclaim. He's been featured throughout the gamut of media in both Japan and the US and its surreal that he is also on this little podcast. Ramen lord and I somehow managed to win the bid for a charity auction for Ivan's time called Ask Chefs Anything and while he was only required to spend 30 minutes with us, he went for over an hour. The discussion was incredibly enlightening and I can't say how much of a class act Ivan was throughout the whole experience. In today's show I sit down and to Ernie Watkins a sushi chef from Central California who’s right in the middle of his transition from making sushi to making ramen. I wanted to get Ernie on the show for a couple of reasons, 1 he’s just a really nice guy and 2. The speed at which he’s gone from making his first bowl of ramen to selling 100 ramen kits at a time is pretty remarkable. I think the two of us started trying to make ramen roughly around the same time and I have yet to sell anything that I’ve made, so I really wanted to talk to him and try to learn the steps he took to secure locations for his first popups to marketing his ramen kits during the stay at home orders. Ep 18. Ramen Kaonashi - Japanese Ramen Chef and Youtuber running a shop in Singapore
In today's episode, we sit down with another Japanese ramen chef. He goes by the name Ramen Kaonashi on the internet, which roughly translates to "No face ramen” because he does not show his face publicly to keep his identity secret. He operates a ramen restaurant in Singapore and has been making ramen professionally for over a decade working in various ramen shops in Japan. He also has a YouTube channel by the same name where he shares his recipes for making real Japanese ramen in English. In this episode, he shares his thoughts on operating a ramen shop outside of Japan, how to make good ramen and he share a phenomenal tip at the end of the interview which might be the best tips ever provided by a guest on the show for those of us who are trying to get better at making ramen at home. In today's episode I sit down with Chris Gantan, a vegan ramen cook from San Francisco California. Vegan ramen is something that I get a ton of requests for on my YouTube channel and yet, I really don’t know anything about it. It seemed so challenging to me to make ramen without bones or any kind of animal products that I didn’t even know where to start.  Luckily for me and for you, there are people like Chris out there who is not just a ramen cook making vegan ramen, he’s a vegan who is obsessed with making ramen. This is actually the second time we tried to record this episode, the first time was months back and I feel like this the way it was meant to be because it seems we’ve both evolved in our thinking about what making ramen is all about in parallel so this conversation was a lot more nuanced and helpful in my opinion. Kyle Humphreys is a ramen chef from Indianapolis Indiana. He approached me with the idea to do this episode and I thought it was a great idea. Kyle attended one of those ramen schools in Japan that many people have seen on youtube and instagram and in this episode he talks all about what its like to go to one of these schools. In this episode he talks about the good, the bad and what he took away from the experience. Kyle is currently working at a restaurant called Lil Dumplings in Indianapolis doing weekly ramen specials and also talks about what it takes do sell ramen successfully outside of Japan.
