  • Aged in New American Oak and ex-bourbon barrels for at least 4 years

Tasting notes (courtesy of the website)

  • Appearance / Color: Golden yellow
  • Nose / Aroma / Smell: liquorice-bourbon notes (“near perfect bitter-sweet balance); burnt honeycomb and toffee
  • Flavor / Taste / Palate: richness and sheen to the enormous barely-oak sweetness; big bourbon taste with notes of liquorice and molasses sugar and barley
  • Finish: long, wonderfully layered oak offering variations of a sweet dry theme; a touch silky with some cream toffee at the death

There are two expressions coming from the distillery - the blended whisky, which I’m drinking, and the Single Malt - the single malt being much more expensive - about $80 I think.

This retails for about $35-$40, and I got it for $20

The tasting notes from the distillery are as follows:

  • Color: Bright orange/amber in color
  • Nose: Orange Marmalade, Dried Apricot, Spice Cake, Pineapple Blossoms and Suede
  • Palate: Vibrant, dry-yet-fruity medium-to-full body and a long, Orange Bread Crust, Peach Cobbler, Peppery Spice and limestone accented finish.

A remarkably fruity, exotic and enigmatic whisky that will make unique cocktails.”

      • Sultanas - made from green seedless grapes and typically coated in an oil-based solution prior to drying to speed up the process; typically smaller than raisins and sweeter, juicer and lighter in color
      • Currents - made by drying a variety of small, seedless grapes for up to 3 weeks; due to size have a sweet, tangy, intense flavor
  • Flavor / Taste / Palate: smooth, delicate, sweet, fruit (both fresh and rich dried fruit), with a hint of bitterness
  • Finish: long, leaving an aftertaste of Madeira cake and sultanas

    • Appearance / Color: Light Amber
    • Nose / Aroma / Smell: You’ll find distinct Rum-like aromas of warm caramel, spun sugar, mint, and wood.
    • Flavor / Taste / Palate: The palate is light with spice cake and orange zest with a hint of vanilla. Maybe lightly floral.
    • Finish: The finish is quick with a bit of heat on the tail.
    • This one is aged 4 years in American oak barrels.
    • The bottle is really cool - it has this neat woodblock print-style label, screw top - no cork.

  • NOSE – Barley sugar, hint of mint before leading into the most wonderful notes of freshly cut wild flowers. After a few minutes and with water you’ll start to get caramelised fruits, lemon drops and honey, and tangerine.
  • PALATE – Sweet oak and barley. A combination of ripe green fruit, brown sugar and sweet malt bring closure with ocean salt.

  • 3 oz BV, 1 oz sweet vermouth, 2 dashes of bitters, 1 cherry

Nick - Pendleton

  • 40% ABV / 80 Proof
  • Nose: Vanilla, honey, butterscotch, and custard join together for a pleasing aroma. Hint of freshly grated cinnamon bark.
  • Taste: Warm fall fruits and honey are balanced with a hint of spice to balance the flavor.
  • Finish: A medium balance and smooth finish.
  • Oak barrel-aged and distilled in Canada - before it’s bottled glacier-fed spring water is added from Mt. Hood (Oregon’s highest peak). So, everyone think back to Tincup - this is basically Canadian Tincup.

Other Pendleton’s:

  • Pendleton 1910 - an 80 proof 100% rye whiskey aged 12 years - I NEED TO FIND THIS
    • Pendleton 1910 is another nod back to the Rodeo from which they take their name - the Pendleton Round Up was started in 1910.
  • Pendleton Midnight - this one is 90 proof - the big claim to fame with this one is that a portion of the blend is aged for over six years in American brandy barrels
  • Pendleton Directors’ Reserve - back to 80 proof - this one is aged 20 years
    • The only one in the collection that doesn’t have the glacier water claim to fame is the 1910, or the 100% rye.

Under the supervision of the Canadian Government



Notes: remarkably smooth with hints of caramel, vanilla, coconut, and rye spiciness

Purchased a 1.75 liter in DC for $13.99 pre tax

Crafted from a mix of high-quality grains, including rye, barley, and corn. The mash is then crafted and aged in bourbon barrels for up to eight years. These barrel-aged high wines are mixed with fresh, base whisky spirit and then returned to bourbon barrels to age for at least three years where they mature into rich, smooth whisky.


VELVET MANHATTAN
Ingredients

3 parts Black Velvet Reserve

1 part sweet vermouth

1 maraschino cherry

We recommend some of your favorite bitters as well


Directions

Combine ingredients and shake well with ice. Strain into an martini glass and garnish with a cherry.

What Nick is drinking: Woodford’s Boulevardier

INGREDIENTS

  • 3/4 OZ Straight Bourbon Whiskey
  • 3/4 OZ Sweet Vermouth
  • 3/4 OZ Campari®

INSTRUCTIONS

  1. Combine all ingredients to mixing glass, add ice and stir
  2. Strain to tumbler over block ice
  3. Garnish with an orange twist

Know your mash bills:

  • Bourbon - 51% corn
  • High-Rye Bourbon - 51% corn / rye is usually around 25% (no official standard)
  • Rye - 51% rye

What Nick is drinking: Woodford Reserve Kentucky Straight Bourbon

Official Tasting Notes

  • 45.2% ABV / 90.4 Proof
  • Regularly $36 - purchased for $30 for the 750 ML bottle

Mashbill 

  • 72% corn (locally grown from Shelby County in Kentucky)
  • 18% rye
  • 10% malted barley (They say this provides a balance between the sweetness of the corn and the rye spice and nuttiness of the malt)

NOSE - Heavy with rich dried fruit, hints of mint and oranges covered with a dusting of cocoa. Faint vanilla and tobacco spice.

  • TASTE - Rich, chewy, rounded and smooth, with complex citrus, cinnamon and cocoa. Toffee, caramel, chocolate and spice notes abound.
  • FINISH - Silky smooth, almost creamy at first with a long, warm satisfying tail.

A little history on the "Black Manhattan"

  • Black Manhattan - Created by bartender Todd Smith when he worked at San Francisco’s Bourbon & Branch, the Black Manhattan recipe uses Averna in place of sweet vermouth—a groundbreaking move when it was created in 2005.
    • Averna Amaro - an Italian herbal liqueur made from an infusion of aromatic herbs, dried flowers, spices and liquorice
      • Created in 1868 for Salvatore Averna by herbalist monks of the San Spirito Abbey in Caltanissetta
      • First licensed spirit in Sicily and to this day remains one of the best selling amaros

What we’re drinking: Monkey Shoulder - check out the drink recipes! 

Monkey Shoulder (~$33 in Maine) 43% ABV

  • A blended malt scotch whisky
    • Glenfiddich, Balvenie and Kininvie - hence the 3 monkeys
  • Cask type is ex-bourbon
  • Comprised of small batches of Speyside single malts, blended together in a marrying...tub….vat... for 3-6 months
    • What is a Speyside single malt? It is a single malt Scotch whisky, distilled in Strathspey, the area around the River Spey in Moray and Badenoch and Strathspey, in northeastern Scotland.
    • That region will always lend a butchscotch taste to the whisky
    • What is a marrying cask you ask? Basically a cask used to finish off and mature whiskey after its initial blending process
  • To Review: A condition that maltmen would develop because they essentially performed the same, repetitive motion every day of the week for hours on end - basically the person turning the malt could develop an elongated shoulder/arm from the repetitive motion they go through
  • In a company response email dated 2012 it was confirmed that they do add caramel coloring to the whiskey for the purpose of ensuring consistency.
  • Carmel coloring (E105a) is typically used to - as they said - ensure consistency across the bottling. Because they use previously used barrels the scotch doesn’t pull as much color from the wood.

Official Nose Notes: Zesty orange, vanilla honey, spiced oak

Michelle’s “Old Fashioned Manhattan” Recipe

  • After much research Michelle's rule is 1/2 sugar cube doused with 3 dashes of bitters/ 2oz preferred bourbon or rye. Glass rimmed with an orange (not garnished), and 2 luxardo cherries for garnish.
  • You’ll find it’s the perfect in between of a Manhattan and Old Fashioned, especially if you go with rye

This week we're talking about our most loved and hated cocktail recipes and their mostly made up origins.
Classic Manhattan

2 ounces bourbon or rye
1 ounce sweet vermouth
2 dashes Angostura bitters
1 dash orange bitters
Garnish: brandied cherry


Add all the ingredients into a mixing glass with ice, and stir until well-chilled.
Strain into a chilled coupe.
Garnish with a brandied cherry.

Paul's Manhattan

2 ounces Tincup whiskey
1 ounce dry vermouth
2 dashes cocoa bitters
Garnish: luxardo cherry


Add all the ingredients into a mixing glass with ice, and stir until well-chilled.
Strain into a glass.
Garnish with a luxardo cherry.

Classic Old Fashioned

1/2 teaspoon sugar
3 dashes Angostura bitters
1 teaspoon water
2 ounces bourbon
Garnish: orange peel


Add the sugar, bitters and water into a rocks glass, and stir until sugar is nearly dissolved.
Fill the glass with large ice cubes, add the bourbon, and gently stir to combine.
Express the oil of an orange peel over the glass, then drop in.

Nick's Old Fashioned

1/2 teaspoon sugar
3 coffee and pecan bitters
1 teaspoon espresso
2 ounces Tincup whiskey
Garnish: cherry


Add the sugar, bitters and espresso into a rocks glass, and stir until sugar is nearly dissolved.
Fill the glass with large ice cubes, add the whiskey, and gently stir to combine.
Garnish with cherry

This week we're talking about Copper Fox in Sperryville, VA

  • Specializing in a scotch-esk whisky created after the owner apprenticed at the Bowmore Distillery on the Isle of Islay off the western coast of Scotland

Tasting Notes for the American Single Malt:

  • Nose: aromas of suede, olive tapenade, honey and wood fire
  • Palate: dried mango chutney and clay with silky dry fruitiness, medium-full body
  • Finish: long and spicy, with wood smoke, orange marmalade on rye toast and root beer float
  • “Smokey and complex; a unique, distinctively flavorful, brawny and balanced whisky. A great choice for artisan cocktails or sipping”

American Single Malt Production:

  • 100% hand malted Virginal barley
  • Dried with hand-cut apple wood and cherry wood smoke
  • Double pot-distilled
  • Mature in ex-bourbon barrels with infusions of toasted apple wood and oak chips
  • 48% ABV/96 Proof

Episode 3: Blending it back to basics, state-side...

This week we're talking about Tincup American Whiskey out of Denver, Colorado. 

What is whisk(e)y and how is whisk(e)y made?

  1. Water, yeast, and grain to start! 
  2. First we malt (if using barley) - get that barley partially germinated
  3. Then we mash - stir it all up and make grain soup
  4. Then we ferment - let the yeast feast and get some alcohol brewing
  5. Followed by distilling - getting down to the good stuff
  6. Toss it in a wooden barrel/cask and let it sit until the magic happens
  7. Maybe "finish" it in another wooden cask (more magic)
  8. Bottle it
  9. DRINK IT

Blizzard

  • 3oz bourbon or blended whiskey (which Tincup is a blended whiskey)
  • 1oz cranberry juice
  • ½ oz lemon juice
  • 1 oz simple syrup (sub for honey, agave, syrup)
  • Lemon slice

Shake with ice, strain into an ice-filled old fashioned glass - garnish with lemon

The cranberry and lemon should balance the sweetness from the simple syrup and the whiskey
