BBQ Bacon Burgers

What You Will Need:

Measuring spoons
measuring cups
1 grill
1 pastry brush
Paper towels

Ingredients:

1 ½ pounds of ground round
¼ teaspoon of salt
¼ teaspoon of freshly ground pepper
½ cup of barbecue sauce, divided
4 slices of white Cheddar cheese
4 sesame seed hamburger buns
8 cooked bacon slices

Cooking Directions:

Preheat grill to 350 to 400 degrees (medium-high) heat).
Shape beef into 4 (4 inch diameter) patties.
Sprinkle with salt and pepper.
Place patties on cooking grate of grill; brush with 2 tablespoons of barbecue sauce.

Grill,

covered with grill lid, 5 minutes.
Turn patties over;
brush with an additional 2 tablespoons of barbecue sauce.
Cook 5 minutes,
or until beef is no longer pink in the center.
Top each burger with 1 slice of cheese. Grill, covered with grill lid, 1 minute, or until cheese melts.
Place 1 patty on bottom half of each bun. Top each with bacon and barbecue sauce.
Top with bun.

Notes:

Toast buns on grill;
a swipe of melted butter makes them crispy.
Grill a sliced Vidalia onion on the grill alongside the burgers for an extra topping.
Lettuce, tomato and pickles would also pare well with these burgers.

Makes 4 servings.

Helpful Hints:

Peeled Too Many Potatoes?

* Submerse them in cold water to which a few drops of vinegar have been added. Keep refrigerated and they will last for 3 to 4 days.
* Leftover baked potatoes will sour quickly if stacked together in the refrigerator.

How to keep Garlic fresh as the day you bout them?

* Garlic cloves will never dry out if you store them in a bottle of cooking oil. After the garlic is used up, you can use the garlic-flavored oil for salad dressing.

Renee Rentmeester was an intern at a television station, working dillengentlyto earn her worth at the station she was employed. After a time, a little voice in her head told her to launch a non-for-profit organization,. From these meeger beginnings, to a person to be respected among the blind community, Renee Rentmeester became the executive producer of the Cooking Without Looking television show on PBS.

Cooking Without Looking has become a sensation with a podcast, and YouTube channel, along with the Cooking Without Looking Facebook group. You can subscribe and follow at the links below.

A group of men, sitting in a converted garage studio, knocking back the suds on a hot Texas afternoon, and talking about their various home handymen projects…

Now picture the men as being blind and visually impaired, and you have the Blind Handyman, with Phil Parr, the creator, producer and host of the show, his compatriots, Don Shaw, Don Patterson and Tom Houston. Together, these men decided to get together to let people know that the blind can accomplish any job, if they have the know-how, and the funds with which to support their projects. The Blind Handyman crew bring you the first of those solutions, and the second one is up to the handyman, blind or not.

Here now is The Blind Handyman, in the hopes of inspiring others the same way they inspired Victor, when he first went blind in 2002. Enjoy, as these four men regale you with tales of their projects and how they accomplished them, and how you can do the same, with just a few tools and confidence.

Asian Calamari And Citrus Salad

What You Will Need:

Measuring cups
Measuring spoons
1 sharp kitchen knife for slicing
1 greater
1 knife for pealing
Mixing bowls
1 whisk
1 shallow dish or large freezer bag
a cooking grate
Paper towels

Ingredients:

3 naval oranges
¼ cup of olive oil
¼ cup of red curry paste
¼ teaspoon of salt
¼ teaspoon of pepper
1 pound package of cleaned calamari (tubes and tentacles), rinsed
Cooking spray
1 cup of thinly sliced red onion
Fresh cilantro leaves

Cooking Directions:

Grate orange peel zest to 1 teaspoon.
squeeze juice from 1 orange to obtain 1 third cup of juice
Peel and section remaining 2 oranges. Coarsely chop sections.
Whisk together orange zest, orange juice, olive oil, red curry paste, salt and pepper in a bowl and reserve 3 tablespoons mixture for later use.
Pour remaining marinade into a large shallow dish or zip-top plastic freezer bag; add calamari.
Cover or seal and chill 2 hours,
turning occasionally.
Remove calamari from marinade, discarding marinade.
Coat a cold cooking grate with cooking spray, and place on grill.
Preheat grill to 400 to 450 degrees (high) heat.
Grill calamari tubes and tentacles, without grill lid, 4 minutes, or until firm,
turning once.
Place calamari in a large bowl;
add red onion, cilantro, chopped orange sections and reserved 3 tablespoons marinade; toss gently.

Notes:

Red curry paste gives this marinated calamari a huge flavor boost. This dish is great hot off the grill or chilled.
Shrimp can be substituted for the calamari, if you prefer.

Makes 4 servings.

Tips and helpful hints:

Keeping Food Fresh:

Lettuce And Celery:

* Lettuce and celery will keep longer if you store them in the refrigerator in paper bags instead of cellophane ones. Do not remove the outside leaves of either until ready to use.
* Lettuce won't rust as quickly if you place a paper towel or napkin in the storage container.
* Line the bottom of the vegetable compartments with paper toweling. This absorbs the excess moisture and keeps all fruits and vegetables fresher for a longer period of time.

Sprouting Onions:

* To keep dry onions from sprouting and becoming soft, wrap individually in foil. They will stay firm for some time.

Coq au Vin

What You Will Need:

Measuring cups
1 sharp kitchen cutting knife
1 mincer
measuring spoons
1 bottle opener
1 can opener
1 crock-pot
1 ladle
1 mixing bowl
1 mixing spoon
paper towels

Ingredients:

2 cups of frozen pearl onions, thawed
4 slices of thick-cut bacon, crisp cooked and crumbled
1 cup of sliced mushrooms
1 clove of garlic, minced
1 teaspoon of dried thyme
1/8 teaspoon of black pepper
6 boneless, skinless chicken breasts (about 2 pounds)
½ cup of dry red wine
¾ cup chicken broth
¼ cup of tomato paste
3 tablespoons of all-purpose flour
Hot cooked egg noodles, optional

Cooking Directions:

Layer onions, bacon, mushrooms, garlic, thyme, pepper, chicken, wine and broth
in a Crock-Pot.
Cover; cook on low for 6 to 8 hours.
Remove chicken and vegetables into a sealable container.
cover container and keep warm.
Ladle 1/2 cup cooking liquid into small bowl; cool slightly.
Mix reserved liquid, tomato paste and flour until smooth;
stir into Crock-Pot.
Turn Crock-Pot to high.
Cook, uncovered, for 15 minutes,
or until thickened.
Serve over hot noodles, if desired.

Makes 6 servings.

Kitchen Helpful Hints:

Washing/Cleaning Thermos Bottles:

* Put 1 teaspoon baking soda in bottle, fill with warm water and soak a few minutes prior to washing in usual manner.

Rusty Tin Pie Pans?

* Remove rust by dipping a raw potato in cleaning powder and scouring.

Now picture the men as being blind and visually impaired, and you have the Blind Handyman, with Phil Parr, the creator, producer and host of the show, his compatriots, Don Shaw, Don Patterson and Tom Houston. Together, these men decided to get together to let people know that the blind can accomplish any job, if they have the know-how, and the funds with which to support their projects. The Blind Handyman crew bring you the first of those solutions, and the second one is up to the handyman, blind or not.

Chipotle Cornish Hens

What You Will Need:

a kitchen knife for cutting vegetables or a vegetable cutter
a can opener
Measuring cups
A crock-pot
a small mixing bowl
a skewer or kitchen fork
a serving platter
a slotted spoon
paper towels

Ingredients:

3 small carrots, cut into ½ inch rounds
3 stalks celery, cut into ½ inch pieces
1 onion, chopped
1 can (7 ounces) of chipotle peppers in adobo sauce, divided
2 cups prepared cornbread stuffing
4 Cornish hens (about 1 1/2 pounds each)
Salt and black pepper
Fresh parsley, chopped, optional

Cooking Directions:

Coat inside of Crock-Pot with nonstick cooking spray.
Add carrots, celery and onion.
Pour canned chipotles into small bowl. Finely chop 1 chipotle pepper.
Remove remaining peppers from adobo sauce and reserve for another use.
Mix half of chopped chipotle pepper into prepared stuffing.
Add remaining half of chopped chipotle pepper to adobo sauce.
Rinse and dry hens,
removing giblets if any.
Season with salt and black pepper inside and out.
Fill each hen with about 1 cup of stuffing. Rub adobo sauce onto the hens.
Place in Crock-Pot,
arranging hens neck down and legs up. Cover; cook on high for 3 and a half to 4 and half hours, or until hens are cooked through and tender.
Transfer the hens to a serving platter. Remove vegetables with slotted spoon; arrange around the hens.
Garnish with parsley.
Spoon the cooking juices over the hens and vegetables, if desired.

Note:

For spicier flavor, use 1 chipotle pepper in the stuffing
and 1 chipotle pepper in the sauce.
Chipotle peppers can be very spicy.
Until you know how much spiciness you prefer, use the smaller quantities recommended in recipes.
You can always add more the next time you prepare the recipe.

Makes 4 servings.

* To renew and freshen, soak overnight in salt water or baking soda.
* Wash in dishwasher.

Getting rid of calcium deposits on Tea Kettles:

* To get rid of lime or calcium deposits, fill with equal parts vinegar and water. Bring to a boil and allow to stand overnight.

On today’s Afternoon Radio Theater Sundae, Pepsi-Mama takes you down the immigrant highway with the show, “Life with Luigi”.

Life with Luigi is an American radio situation comedy series which began September 21, 1948, on
CBS Radio and broadcast its final episode on March 3, 1953.

The action centered on Luigi Basco and his experiences as a newly arrived Italian immigrant in
Chicago. Many episodes took place at the night school classes that Luigi attended with other immigrants from different countries. Another common theme involved Luigi's landlord/sponsor, Pasquale, scheming to get Luigi to marry his obese daughter.

J. Carrol Naish played Luigi.

Life with Luigi was created by Cy Howard, who had earlier created the hit radio comedy,
My Friend Irma. The working title was The Little Immigrant, echoed in the sign-off of each episode, "Your lovin-a son-a, Luigi Basco, the li'l immigrant." Other characters on the show included Pasquale (Alan Reed), another Italian immigrant who is always trying to trap Luigi into marrying his daughter Rosa ( Jody Gilbert); native Chicagoan Jimmy ( Gil Stratton), Luigi's young business associate; Miss Spaulding (Mary Shipp), Luigi's night school teacher and ideal woman; and Schultz (Hans Conried), a German immigrant and fellow student in Luigi's citizenship class. Each episode used the framing device of Luigi narrating a letter to his mother back in Italy.

The show was popular, successfully competing with Bob Hope 's The Pepsodent Show . For most of its run, Life with Luigi aired at 9 pm on Tuesdays. Despite an estimated 30% share of the audience in its timeslot, the show was without a sponsor [3] until Wrigley's Gum bought it in 1950, continuing till the show ended in 1953.

Braised Italian Chicken With Tomatoes And Olives

What You Will Need:

Measuring spoons
Measuring cups
1 can opener
1 bottle opener
1 mincer
1 plate
1 skillet
1 crock-pot
1 stirring spoon
Paper towels

Ingredients:

2 pounds boneless, skinless chicken thighs
1 teaspoon of kosher salt
½ teaspoon black pepper
½ cup all-purpose flour
Olive oil
1 can (about 14 ounces) of diced tomatoes, drained
1 cup of pitted quartered kalamata olives
1/3 cup of dry red wine
1 clove of garlic, minced
1 teaspoon of chopped fresh rosemary
½ teaspoon of red pepper flakes
Hot cooked linguini or spaghetti
Grated Parmesan cheese, optional

Cooking Directions:

Season chicken with salt and black pepper.
Spread flour on plate;
lightly dredge chicken in flour, coating both sides.
Heat oil in large skillet over medium heat. Working in batches, sear chicken until well browned on both sides.
Use additional oil as needed to prevent sticking.
Transfer to Crock-Pot.
Add tomatoes, olives, wine and garlic. Cover; cook on low for 4 to 5 hours.
Stir rosemary and red pepper flakes into Crock-Pot.
Cover; cook on low for 1 hour.
Serve over linguini.
Garnish with Parmesan cheese, if desired.

Makes 4 servings.

Kitchen Helpful Hints:

Got a Messy/Dirty Refrigerator?

* A little vanilla poured on a piece of cotton and placed in the refrigerator will eliminate odors.
* To prevent mildew from forming, wipe with vinegar. The acid effectively kills the mildew fungus.
* Mix 3 tablespoons of baking soda in a quart of warm water. Wash inside and out.
* Use a glycerin-soaked cloth to wipe sides and shelves. Future spills wipe up easier. And after the freezer has been defrosted, coat the inside and coils with glycerin. The next time you defrost, the ice will loosen quickly and drop off in sheets.
* An open box of baking soda will absorb food odors for at least a month or two.

Got a Dirty Sink?

* For a sparkling white sink, place paper towels across the bottom of your sink and saturate with household bleach. Let sit for 30 minutes or so.
* Stains on porcelain can be easily removed with a paste made of hydrogen peroxide and cream of tartar.
* Rub stainless steel sinks with lighter fluid if rust marks appear. After the rust disappears, wipe with your regular kitchen cleaner.
* To remove streaks from stainless steel, rub with baby oil or olive oil.
* Use a cloth dampened with rubbing alcohol to remove water spots from stainless steel.
* Spots on stainless steel can also be removed with white vinegar.
* Carbonated water will shine up stainless steel in a jiffy.

Basil Chicken Merlot With Wild Mushrooms

What you will need:

Measuring spoons
1 kitchen or chef's knife
measuring cups
1 chopper for chopping onions and garlic
1 can opener
1 bottle opener
1 pasta pot
1 skillet
1 slotted spoon
1 pot spoon for stirring
mixing spoons
1 crock-pot
1 medium sized mixing bowl
serving bowls
a ladle
Paper towels.

Ingredients:

3 tablespoons extra virgin olive oil, divided
1 roasting chicken (about 3 pounds), skinned and cut into individual pieces
1 ½ cups of thickly sliced cremini mushrooms
1 medium yellow onion, diced
2 cloves garlic, minced
1 cup of chicken broth
1 can (6 ounces) of tomato paste
1/3 cup of Merlot or other dry red wine
2 teaspoons of sugar
1 teaspoon of ground oregano
¼ teaspoon of salt
¼ teaspoon of black pepper
2 tablespoons of minced fresh basil
3 cups of hot cooked ziti pasta, drained
Grated Romano cheese, optional

Cooking Directions:

Heat 1 1/2 to 2 tablespoons oil in skillet over medium heat.
Working in batches, brown chicken pieces on each side for 3 to 5 minutes, turning once.
Remove with slotted spoon.
Set chicken aside.
Heat remaining oil in skillet.
Add mushrooms, onion and garlic;
cook and stir 7 to 8 minutes,
or until onion is soft.
Transfer to Crock-Pot.
Top with reserved chicken.
Combine broth, tomato paste, wine, sugar, oregano, salt and pepper
in medium bowl.
Pour sauce over chicken.
Cover; cook on low for 7 to 9 hours,
or on high for 3 to 4 hours.
Stir in basil.
Place pasta in serving bowls.
Ladle chicken and mushrooms over pasta and spoon extra sauce over all.
Garnish with cheese, if desired.

Makes 4 to 6 servings.

* Coffee or tea stains can be scoured out with baking soda.

Caring for Aluminum Utensils:

* Minerals in foods and water may cause dark stains inside aluminum utensils.

03 X 146 ARTS 058: Lum and Abner (1939)

Lum and Abner was an American network radio comedy program created by Chester Lauck and Norris Goff, that was aired from 1931 to 1954. Modeled on life in the small town of Waters, Arkansas, near where Lauck and Goff grew up, the show proved immensely popular. In 1936, Waters changed its name to "Pine Ridge" after the show's fictional town.

The series was created by co-stars Chester Lauck (who played Columbus "Lum" Edwards) and Norris Goff (Abner Peabody). Lum always pronounced his own name as Ed'erds and was very annoyed if Abner or anyone brought up his full first name. The two characters performed as a double act , with Lum generally playing the straight man to Abner's attempts to break free from Lum's influence. As co-owners of the “Jot 'em Down” Store in the fictional town of “Pine Ridge”, Arkansas, the pair are constantly stumbling upon moneymaking ideas only to find themselves fleeced by nemesis Squire Skimp, before finally finding a way to redeem themselves.

Lum and Abner played the hillbilly theme with deceptive cleverness. In addition to the title characters, Lauck also played Grandpappy Spears and Cedric Weehunt while Goff played Abner, Squire Skimp, Llewelyn "Mousey" Grey, Dick Huddleston, and most of the other characters.

Lum and Abner, like most sitcoms of the era, had a live house band , in this case a string band in keeping with the show's hillbilly humor.

Marshall Jones, before his adoption of the "Grandpa" persona that made him famous years later, was among the band's first members.

Peach Cranberry Upside Down Cake

What You Will Need:

Measuring cups
a can opener
A kitchen knife for cutting
an implement for spreading
two 9 inch round cake pans
A toothpick or skewer
2 Serving plates
paper towels

Ingredients:

1 stick of butter, melted
½ cup of packed brown sugar
3 cups of thawed frozen or canned peach slices (thick slices cut in half)
2 cups of fresh or thawed frozen cranberries
1 package (about 15 ounces) of yellow cake mix,
plus the ingredients to prepare mix
The package will give directions

Cooking Directions:

Preheat the oven to 350 degrees.
Spray the two 9 inch round cake pans
with nonstick cooking spray.
Divide the butter and brown sugar between the prepared pans;
spread evenly over the bottom of the pans.
Arrange the peach slices over the butter mixture;
sprinkle with the cranberries.
Prepare the cake mix according to the package directions.
Spread the batter over the fruit in each pan.
Bake for 30 to 35 minutes,
or until a toothpick inserted into the center of the cake comes out clean.
Cool for 5 minutes;
invert the cakes onto serving plates.
Cool at least 30 minutes before serving.

Makes 12 to 16 servings.

Lemon Blueberry Cake

What You Will Need:

Measuring cups
a 13 by 9 inch baking pan
a wire rack
a large bowl
An implement for beating
An implement for spreading
a toothpick or skewer
paper towels

Ingredients:

1 package (about 18 ounces) of lemon cake mix
1 package (4 serving size) of lemon instant pudding and pie filling mix
4 eggs
¾ cup of water
1 cup of vegetable or canola oil
1 cup of fresh blueberries, divided

Cooking Instructions:

Preheat oven to 350 degrees.
Spray 13 by 9 inch baking pan with nonstick cooking spray.
Combine cake mix, pudding mix, eggs, water and oil in a large bowl;
beat for 1 to 2 minutes, or until well blended.
Gently fold in ½ cup of blueberries. Spread the batter in the prepared pan; sprinkle with the remaining half cup of blueberries.
Bake for 20 to 25 minutes,
or until a toothpick inserted into the center comes out clean.
Cool completely in the pan on a wire rack.

Makes 12 to 16 servings.

During the Covid Pandemic, public health departments around the world stepped up, some early, some late, but all did an enormous task of coordinating and dispensing the vaccine and made sure that pandemic tracking was kept up-to-date for every city around the globe, and given the limited resources each of those public health departments had to work with, most would be hard pressed to recall a time when public health departments all came together, worldwide focused on a single goal, and although the pandemic and Covid infections seems to be contained, public health continues to maintain a vigilant role in tracking any knew infections in their local areas.

In some cases, public health departments have grown to encompass larger jurisdictions, such as child-care centers, assisted living facilities, and other jurisdictions that were monitored by other departments and enforcement agencies, but the question then becomes, with the limited number of staff manning each public health department, do they have the manpower to spread their purview?

We’ll also talk about the past week’s news items that have come and gone.

10 Ways To Soften Hard Brown Sugar

1. Keep it stored in an airtight container with a slice of fresh bread placed on top. Seal and leave overnight. It should be fresh again in the morning, if not just let it sit another day or two.
2. Sprinkle a few drops of water over the chunk, seal in a plastic bag and let sit for a couple days.
3. You can also place in an open container, then top with a moistened cloth (paper towel works too). Let sit overnight.
4. Seal it in an airtight container with a few apple slices. This should fix it up within the next day or two. Remove apple slices once it’s fixed.
5. Use foil or plastic wrap to cover the top then set a dampened sheet of paper towel (not dripping wet) on top of the foil. Seal in an airtight container and let sit overnight or a few days as needed. Remove foil and paper towel once the towel is dry and the mass is fresh again.
6. Buy a clay disc or if you have a pottery piece on hand (from a broken clay pot, etc.), set it in water for about 30 minutes. Dry the piece so it isn’t dripping wet. Put the clay piece in a container with the sugar and seal. Check after a few days. Keep it in the container for months if you’d like, this will help prevent the problem from happening in the first place.
7. Need it now? Put it in a container and set in the microwave with a small bowl full of water beside it. Microwave for about 1 minute, check. If it’s not ready, try for another 30 seconds. You can keep doing this until it’s nice and soft, but watch that you don’t melt it.
8. Place the chunk in a baking pan and set in oven (temperature at about 250 degrees. Check after 5 minutes. If still not ready, continue checking every few minutes until it is.
9. Place the mass in a microwave safe plastic bag. Take a square of paper towel and moisten with water (not dripping wet, wring out excess). Arrange the wet paper towel in the bag with the sugar and seal. Heat in the microwave for approximately 20 seconds. If still not ready, microwave for a few seconds more, repeating until it’s ok and ready to use. Be careful it doesn’t get too hot and melt.
10. Stick small pieces in a food processor or blender and chop/pulse until usable. For best results, make sure to keep it stored in a sealed, airtight container. A couple fresh marshmallows or a clay disc kept in the container can help prevent the problem. You can also keep it in the freezer and set it out a few hours before using.

Cherry Cheesecake Dump Cake

What You Will Need:

A can opener
A sharp kitchen knife
A 13 by 9 inch baking pan
A spreading implement
a toothpick or skewer
Paper towels

Ingredients:

1 can (21 ounces) of cherry pie filling
1 can (14 1/2 ounces) of tart cherries in water, drained
4 ounces of cream cheese, cut into small pieces
1 package of (about 15 ounces) of yellow cake mix
1 stick of butter, cut into thin slices

Cooking Directions:

Preheat oven to 350 degrees.
Spray a 13 by 9 inch baking pan with nonstick cooking spray.
Spread the pie filling and tart cherries in the prepared pan.
Scatter the cream cheese pieces over the cherries.
Top with the cake mix, spreading evenly. Top with butter in a single layer,
covering the cake mix as much as possible.
Bake for 45 to 50 minutes,
or until a toothpick inserted into the center of the cake comes out clean.
Cool at least 15 minutes before serving.

Makes 12 to 16 servings.

Helpful Hints for the Kitchen:

Cleanups/For The Drops And Disasters, Plus Some Of The Ordinary Messes:

Dishwasher Film:

* Fill dishwasher with all your glasses and porcelain China. Never put any silver, aluminum or brass in the washer when this method is used or you will have a mess. Put a bowl in the bottom of the dishwasher. Pour 1 cup of household bleach into the bowl. Run through washing cycle but do not dry. This is important. Fill bowl again with 1 cup white vinegar and let the dishwasher go through the entire cycle. This will remove all film, not only from your glasses but from your dishwasher too.

Drains:

* When a drain is clogged with grease, pour a cup of salt and a cup of baking soda in the drain followed by a kettle of boiling water. The grease will usually dissolve immediately and open the drain.

Electric Frying Pan:

* To rid the brown grease spots that form on the bottom of electric frying pan, place the pan in a large plastic bag containing a cloth saturated with ammonia. Close the bag with a rubber band, leaving the handle containing the electric element outside of the bag. In a few hours, remove the pan and you'll be able to wipe the spots off with ease.

Garbage Disposals:

* Grind a half lemon into the disposal to remove any unpleasant odor.

Picture this…

A group of men, sitting in a converted garage studio, knocking back the suds on a hot Texas afternoon, and talking about their various home handymen projects…

Now picture the men as being blind and visually impaired, and you have the Blind Handyman, with Phil Parr, the creator, producer and host of the show, his compatriots, Don Shaw, Don Patterson and Tom Houston. Together, these men decided to get together to let people know that the blind can accomplish any job, if they have the know-how, and the funds with which to support their projects. The Blind Handyman crew bring you the first of those solutions, and the second one is up to the handyman, blind or not.

Here now is The Blind Handyman, in the hopes of inspiring others the same way they inspired Victor, when he first went blind in 2002. Enjoy, as these four men regale you with tales of their projects and how they accomplished them, and how you can do the same, with just a few tools and confidence.

Whose Blind Life is it Anyway is proud to broadcast these shows again, in their entirety in the hopes that, what they gave Victor hope to get past his blindness, and live a fulfilling life, will inspire others with the same assurance.
