Mike Cheer joins me to talk about ancient Norwegian yeast. I sat in a park recently and shared a couple of beers with brewing consultant Mike Cheer. We chatted about his journey through Norway to learn about the new world of brewing options that have recently become available to brewers, thanks to the rediscovery of historic Norwegian farmhouse yeast strains which have been shepherded for countless generations by remote Norwegian brewers. Mike tells me about magic yeast rings, unique ester profiles and the fungi that seems to break all the rules.
