We brought her on today to talk the interview process, what the future holds as far as the cuisine and general ambience, and what it's like working with Trey Parker and Matt Stone, the creators of the famous cartoon series South Park and new owners of the restaurant.

Coming to you with another bonus episode this week, we were able to sit down with one of Colorado's most distinguished Chef and business owners, Dana Rodriguez. A renowned restaurateur who's leadership, love of community, and vison have helped many people around her. We got in depth about her childhood, come-up in the restaurant world, and the welcoming culture that she's been able to develop in her many endeavors as well as the new mezcal and tequila brands she's creating. You can check her out at any one of her three restaurants, including her newest restaurant Cantina Loca opening up on November 15th in North Denver.

We interviewed Edwin Sandoval of Xatrucho Concepts, learning what drives him and where he grew up and some of the challenges he overcame to be such a culinary star. Growing up in Honduras, Edwin goes into detail about the 12-year adaptation to the United States and the restaurant industry that he faced when initially moving here. He strives to create his restaurant, Xatrucho, into one of the premier private cooking concepts in CO. He will be a competitor at the Hispanic Top Chef on November 8th, 2021 at Metropolitan State University.
