About 3 years ago these childhood friends began selling their kimchi at farmers markets. Nate grew up makingsaurkraut with his family for New Years. They would make about three hundred pounds and give it out to their friends and family. Nate developed a love of fermenting which sent him down a rabbit hole. He made hot sauce, soy sauce and even miso and chocolate. Finally he discovered kimchi. From there he took his expertise and sought to refine and put his stamp on this wonderful fermented creation. Mark provides his experience and knowledge spices and flavors to help add an intense complexity to this Korean icon. Nate and Mark's expressions are like nothing you've ever tried. Crunchy... Tin City Distillery, In Pasa Robles, CA, is "in the heart of a drinking town with a farming problem". After you make world class wine you distill it into brandy. The idea for the distillery came way too late at night while drinking wine. They decided that instead of dumping all of the grape juice down the drain they were going to create brandy from it. The next step was create their own brand and their own distillery. Their still originally came from a 55 gallon Fuji film canister. Today their on their forth still iteration a 375 gallon copper pot still. What you will discover ,when you visit, is a plethora of craft and artisan spirits made collaboratively in and around Tin City.

Conversations ensued and a plan was created to take vodka made in New Zealand to the United States market. They developed a recipe for their vodka that is produced from whey. Clear Creek Distillery was founded oil 1985 by Steve McCarthy. Steve's love of pear brandy began while traveling through Europe. He struggled to find it in the states. This led to open the 3rd craft distillery in the United States. Today the distill a plethora of wonderful fruit brandies and America's first single Malt. All of their expressions are painstakingly crafted from raw ingredients within 200 miles of the distillery.

The word Honkaku means authentic in Japanese. Honkaku Spirits is an import company that brings traditional spirits from Japan that are much older than Japanese whiskey. We are focusing Shochu and Awamori in our discussion. Shochu is a spirit made from 53 approved ingredients. Like many, Christopher started out in craft brewing. Perlick Distillery - Scott Perlick
This episode features Scott Perlick of Perlick Distillery.
The Perlick family and their ancestors have been farming the land in Northern Wisconsin since the 1920's. It is a small county with about 17,000 people and two stop lights. They farm over 2,000 acres growing a wide variety of plants and grains. Scott and the family discussed what they would be able to do with the grain on their farm and making something of it. The began to distill alcohol and figure it out as they went. The research from what they wanted to persue came from visiting breweries and distilleries that were not too far away. Initially for Perlick the focus and mindset has been on making vodka. "If we can't make it with making vodka, we shouldn't be in this business", Scott proclaimed. Their vodka has been a huge hit statewide. They also produce a five year single malt and an incredible maple vodka.

The Inn at Grace Winery
In this episode we are joined by Andrew Yingst, Cory Ruggiero and Rachel Rougeaux-Testerman of The Inn at Grace Winery.
The bed and breakfast got it all started in the late 1980's. Grace Le Vines left the property to Christopher Le Vines who established all of the cottages, the winery and vineyard. He changed the name to honor his sister. The grapes were planted in 2007. Pinot Grigio, Cabernet Fran, Chardonnay, Merlot and Sauvignon Blanc make up the varietals that were set into the limestone soil. Today the property boasts being a winery, restaurant, boutique hotel, tasting room and event space. The wines that are being produced are delicious and complex. They honor the history and the future of this hidden gem nestled in Delaware County, Pennsylvania.
