Bio:

Conor left the city, moved to the country and started what would later become a world class farm from nothing and with no experience. He left a IT job in a cubicle to create a homestead on a river where he could catch and grow his dinner. It did not happen quickly as it was very hard those first couple of years for Conor and his wife Kate. Conor and Kate were driven by finding a connection to nature and their food and to make a better life for themselves and their two kids born on the farm. What they ultimately created was one of the most successful small scale vegetable farms in the world.

After a decade of building their farmstead, they now teach others their high production, low till farming methods. Conor found that the current landscape of tools did not work well within his style of farming and thus he became a designer and manufacturer of farm tools. Other farmers agreed, and the tool company, Neversink Farm Tools, was born.

Conor and his family now wish to share their farm with the community through dinners in their newly renovated barn and through videos of farm life they create. They hope to inspire others to either make the leap themselves to a country life or at least to eat great food in a beautiful location with family and friends.

Fishman’s book, “The Big Thirst: The secret life & turbulent future of water,” has become the best-selling water book in a generation, and is changing how people think about water, and how they confront the challenges of climate change. “The Big Thirst” does something few water books do — it restores a sense of wonder about water, along with a sense of urgency.

Fishman’s message is both blunt and optimistic. Everywhere in the world, climate change will make water problems that already exist worst. About Tradd:
Tradd Cotter is a microbiologist, professional mycologist, and organic gardener, who has been tissue culturing, collecting native fungi in the Southeast, and cultivating both commercially and experimentally for more than twenty-two years. In 1996 he founded Mushroom Mountain, which he owns and operates with his wife, Olga, to explore applications for mushrooms in various industries and currently maintains over 200 species of fungi for food production, mycoremediation of environmental pollutants, and natural alternatives to chemical pesticides.

In 2014 Tradd published the best-selling book Organic Mushroom Farming and Mycoremediation (2014), that is still one of the top ten releases with the publisher, Chelsea Green. Tradd has won numerous awards for his work including the prestigious Clemson University Entrepreneur of the Year Award (2013), the EPA GRO-U Fellowship Award (2011), and an expert lecturer on all topics related to fungi in agriculture and medicine.

Dominic D’Agostino, Ph.D., is a tenured Associate Professor in the Department of Molecular Pharmacology and Physiology at the University of South Florida (USF) Morsani College of Medicine and a Research Scientist at the Institute for Human and Machine Cognition (IHMC). Dr. D’Agostino received his B.S. in Nutritional Science and Biological Sciences in 1998 at Rutgers University before receiving a Predoctoral Fellowship in neuroscience at the University of Medicine and Dentistry of New Jersey in 1999.  In 2004 Dr. D’Agostino entered into a postdoctoral fellowship in neuroscience at the Boonshoft School of Medicine at Wright State University in Ohio before moving his research program to USF Tampa in 2006.  Funding through the Department of Defense (DoD) and Office of Naval Research (ONR) lead him to develop nutritional strategies related to enhancing resilience in undersea environments, treating neurological disorders and in brain cancer treatment. Dr. D’Agostino participated as a research scientist and crew member on NASA’s Extreme Environment Mission Operations 22 (NEEMO 22) and continues to work closely with federal organizations, private industry, 501c3 foundations and media outlets. Sarah Lloyd farms with her husband Nels Nelson on the 350-cow Nelson dairy farm in Wisconsin. She works off-farm as the Director of Special Projects for the Wisconsin Farmers Union (WFU). This work includes; support for Community Supported Agriculture (CSA) farmers, organizing for fair prices for dairy farmers through the Dairy Together campaign, and research on fair labor issues in agriculture. She is also the Director of Development and the Secretary of the Board for the Wisconsin Food Hub Cooperative, which aggregates and sells fresh produce into local wholesale markets for its farmer members.

Sarah has a PhD in Rural Sociology from UW-Madison and a Masters in Rural Development from the Swedish University of Agricultural Sciences. She has served on the National Dairy Board and the Wisconsin Milk Marketing Board.

She is also author of two books on farming- Farms With a Future: Creating and Growing a Sustainable Farm Business (2012) and The New Livestock Farmer: The Business of Raising and Selling Ethical Meat (2015). Ann has worked in the nonprofit world for over 20 years, creating and directing national programs, collaborating with over 100 non-profit and government entities to create positive impact among producers and land stewards seeking to build & maintain sustainable farms, ranches and healthy land. Her fund development work has included raising over $1 million for national whole farm planning training for beginning farmer programming. In 2015, she was awarded the Quivira Coalition’s Leadership in Conservation Award.

Ann has been a Holistic Management Certified Educator since 1998 and has practiced and taught Holistic Management® in multiple capacities for 20 years. She also has facilitated classes (onsite and distance learning), taught workshops and presented at conferences. She has written countless articles, helped develop agriculture-based software for financial and grazing planning and written a training handbook, At Home with Holistic Management: Creating a Life of Meaning. 

Ann also taught courses at Indiana University, Wittenberg University, and Antioch College. She earned her BSED from Ohio University and her PhD from Indiana University. When she isn’t serving as our Executive Director for HMI, Ann is Chief Goatherd on her small farm in the Manzano Mountains and Captain of her Earthship (a house made out of tires with photovoltaics, composting toilet and rainwater harvesting) southeast of Albuquerque, New Mexico.

Dr. Terry Wahls is an Institute for Functional Medicine Certified Practitioner and a clinical professor of medicine at the University of Iowa where she conducts clinical trials.  In 2018 she was awarded the Institute for Functional Medicine’s Linus Pauling Award for her contributions in research, clinical care and patient advocacy. She is also a patient with secondary progressive multiple sclerosis, which confined her to a tilt-recline wheelchair for four years. Dr. Wahls restored her health using a diet and lifestyle program she designed specifically for her brain and now pedals her bike to work each day.  Bio: David McConnell is the principal and head grower for Infinity Hundred Farms. He manages the farm’s multiple sites which total over 30 acres, and make Infinity Hundred Farms one of the largest urban farms in the United States. The land and the hydroponic greenhouse located at the non-profit hub Raleigh City Farm in downtown Raleigh, NC is also under David’s purview as Infinity Hundred Farms’ newest site. Infinity Hundred Farms serves the downtown Raleigh restaurants with nutrient dense, high quality produce grown sustainably and free from GMOs and pesticides. ABOUT PETER:
Peter Byck is a professor of practice at Arizona State University, in both the School of Sustainability and the Cronkite School of Journalism. About Fiber Fourteen:
Fiber Fourteen is the passion project of Nathan Lyon, an Emmy-nominated Outstanding Culinary Host, acclaimed Cookbook Author and classically trained Chef with a Health Science background and Sarah Forman, a Recipe Developer, Recipe Tester and Project Manager.

In the fall of 2016, a family member (a parent) was diagnosed with colorectal cancer. A routine colonoscopy revealed a suspicious polyp which was later diagnosed as a “not a major concern” stage 1 cancer. However, a second opinion classified it as stage 2, possibly stage 3. Needless to say, this news came as a total shock to everyone.

And, what first began as a short visit home to help navigate the diagnoses, turned into a 2-month stay – through the duration of the first-round of treatment: a 6-week course of radiation. Nathan and Sarah took over the responsibility of cooking during the treatment.

Given the type of cancer, treatment and possible gastrointestinal side effects, Nathan and Sarah began making slight adjustments to their recipes. Mind you,their meals have always been on the healthy side: plenty of fresh fruits and vegetables, good fats, lean proteins and everything from scratch. But, they decided to make a small change built on a simple idea: decrease the percentage of animal protein so that the majority of the meal is vegetable based (i.e. increase fiber). Armed with their new idea, the challenge was to make those vegetables even more delicious and more satiating than ever before; to make them the star of the show, rather than just humble backup singers.

The meals cooked during this time evolved into the beginner version of the now full-grown Fiber Fourteen Meal Plan, a 14 day fiber-rich, calorie-light recipe meal plan designed to improve your health.

As for the family member who was diagnosed with cancer? They made it through all of their treatments, are recovering quite well and above all, they are living their dreams…

Fresh faced & starry eyed, she started her journey into the food scene by earning her Permaculture Design Certification with an emphasis on community development and ethno botanical horticulture in her early twenties. Bios:


Bob Fassbinder and his wife Kathy have operated Fassbinder Apiaries near Elgin for the past 41 years. Bob graduated from Iowa State University with an engineering degree, but came out as one of Iowa's most innovative and passionate bee keepers. The Fassbinders tend 200 hives in the river valleys of northeast Iowa. Bob is very proactive at promoting both land stewardship and the need for a diverse and healthy landscape through his bees. They continually work toward improving the local genetic health of their bee colonies by selecting successful local colonies and producing their own queens.


Daryl Landsgard grew up on a farm in Clayton County near Gunder. After obtaining a degree from Luther College in Decorah he returned to the farm and has been a life-long farmer ever since. Daryl is a very conservation minded producer and has been both planting trees and doing no-till on his farm for more than 20 years. He is also an avid hunter and angler which motivate him to also manage many parts of his farm in the best interest of diverse wildlife species.


Paul Schlake is a lifelong farmer from Clayton County near St. Olaf. After Paul decided to quit milking cows, he and his fiancé Julie converted a manure storage pit into a hydroponic greenhouse called the “Red-Greenhouse.” They grow and locally market a variety of fresh flowers and seasonal vegetables.


Richard E. "Dick" Jensen is a retired farmer and former Fayette County Supervisor from Elgin, Iowa, and works for the Fayette County Soil and Water Conservation District in West Union. In 2017 he received the Outstanding Soil and Water Conservation District Commissioner Award. Dick is also the organization founder of numerous local educational projects including TAKO – Take a Kid Outdoors and the Echo Valley Environmental Nature Trail. He is a passionate advocate of all things nature and is incredibly passionate about “reconnecting kids to the land and exposing them to the great outdoors.” Most important, Dick is one of the most vocal and life-long supporters of soil conservation practices and sustainable agricultural practices.


Gary Siegwarth has been a Natural Resource Biologist for the Iowa DNR Fisheries Bureau the past 26 years. He has managed Big Spring Trout Hatchery near Elkader the past 18 years. Prior to that he was the Interior Streams and Rivers Research Biologist for the State of Iowa. Prior to his career in natural resources, Gary operated the family farm in Jackson County. In 2018, Gary ran for Governor of Iowa as an Independent candidate and formed the Clear Water Party of Iowa. Part of his mission was to raise awareness and to change our way of thinking for both natural resources and the potential of the future of a more diverse and transparent agricultural system in Iowa.

In November 2015 Chef Patrick Cowden partnered up with Daniel Whittaker to take ownership of The Pharmacy Café in Raleigh North Carolina. Located in an actual working pharmacy that has been serving the public for over a hundred years they serve hand crafted soda jerk style offerings (sodas/egg creams/fizzes), gargantuan biscuits, and creative upscale sandwiches that are all driven by what is seasonal and available locally. Ben created Gold Mountain Coffee Growers in 2007, when small local farmers asked him for help connecting with international markets. They were upset that the coffee economy did not allow them to support their families effectively. He bases the entire social enterprise on quality. Gold Mountain won the SCAE excellence award for sustainability in 2016 for what their specialty coffees achieve economically and environmentally for coffee communities.
