Singapore Sling (Raffles Recipe - as they serve it now) 1 1/2 oz Gin 1/2 oz Fresh Lime Juice 1/2 oz Cherry Heering 1/4 oz Benedictine 1/4 oz Cointreau 1 1/2 oz Fresh Pineapple Juice (we prefer just 1 oz) A Dash of Grenadine 1 Dash of Angostura Bitters Shake all ingredients with ice, strain into a tall ice filled glass, garnish with a wedge of pineapple and a Maraschino cherry. Singapore Sling (Smugglers Cove Recipe - closer to original 'Straits Sling' recipe) 1 1/2 oz Gin 3/4 oz Fresh lemon Juice 1/2 oz Cherry Heering 1/4 oz Benedictine 1/4 oz Demarara Syrup 1 Dash of Angostura Bitters 1 Dash of Orange Bitters 2 oz Soda Water Shake all ingredients other than the soda water with ice, strain into a tall ice filled glass, top with soda water, stir to combine, garnish with a twist of lemon and a Maraschino cherry.

The Hanky Panky 1 1/2 oz Gin 1 1/2 oz Sweet Vermouth 2 Dashes of Fernet Branca Stir all ingredients with ice to chill and dilute, strain into a cocktail glass, garnish with an orange twist. The Fernet Con Coca A shot of Fernet Branca mixed with Coca Cola, build in glass over ice The Ferrari 1 oz Campari 1 oz Fernet Branca Stir with ice and strain into a shot glass. Put mixed cocktail into the freezer for at least 15 mins before serving. The Prancing Horse 1 1/2 oz Vodka 1/2 oz Ferrari 3/4 oz Fresh Lime Juice 1 Dash Angostura Shake all ingredients with ice, strain into a tall ice filled glass, top with Ginger Beer and stir to combine, garnish with candied ginger.
