- 1 Barspoon Premium Mango Chutney
- 2 oz Aged Rum
- 3/4 oz Fresh Lemon Juice
- 3/4 oz Grand Marnier
- 1 Barspoon Simple Syrup (optional)
Shake all ingredients with ice, strain into a cocktail glass rimmed with Cinnamon Sugar.

3/4 oz Gin
3/4 oz Blanco Vermouth
3/4 oz Luxardo Bitter Bianco
2 Barspoons Olive Brine
2 Dashes Olive Bitters
2 oz Fever Tree Mediterranean Tonic Water
Top with Soda Water
Build in highball glass with ice, garnish with expressed Lemon Zest and Olives
Last Vacation
1 oz Gold Rum
1 oz White Rum
1/2 oz Fresh Lime Juice
1/2 oz White Grapefruit Juice
3/4 oz Cinnamon Syrup
1 Barspoon Maraschino Liqueur
2 oz Brewdog Elvis Juice or other Grapefruit IPA
Add all ingredients except the IPA to a shaker with ice and shake briefly to chill and combine. Add the IPA to a highball glass and then add the contents of the shaker including the ice. Stir to combine, top with more ice and garnish with a Cinnamon Stick and Grapefruit Wedge.

3/4 oz Cask-Proof Bourbon
1 oz Lemon Juice
1 tsp 2:1 Simple Syrup
1/2 oz Egg White
Combine ingredients in a cocktail shaker and shake without ice or (even better) use an immersion blender to combine and froth. Add ice and shake. Strain over fresh ice into a large rocks glass, garnish with a twist of lemon and maraschino cherries.
*Use Frangelico instead of Amaretto for a Frangelico Sour

1 Barspoon of Absinthe

Muddle the cucumber and salt in a shaker tin, then add the Gin, Lime Juice, Simple Syrup and Rosewater and shake with ice. Double strain into a cocktail glass and garnish with a mint leaf and 3 drops of Angostura Bitters.

Muddle the cherry tomatoes in a mixing glass, add the remaining ingredients and ice, stir to chill and dilute, double strain into a rocks glass and garnish with Cherry Tomatoes, Mozzarella Pearls and Basil Leaves.

* Honey Ginger Syrup
You can find lots of different recipes online but here's mine (also works with Agave Syrup instead of Honey if preferred):
250 ml Honey
250 ml Water
180g Unpeeled Fresh Ginger
A pinch of Salt
Blend Honey, Ginger and Water into a puree.
Add some cracked black or cayenne pepper** into a dry pain, heat until fragrant, add the pureed honey ginger mix and boil, simmering for 10 minutes. Put aside to cool for a further 10 minutes. Fine strain into a glass bottle, let stand until room temperature and then seal and refrigerate.
**Without getting into the chemistry, fresh ginger soon loses its spiciness once processed, but black or cayenne pepper doesn't, so the inclusion of a little black/cayenne pepper in the syrup compensates for this.

Top with Ginger Beer
Build in glass adding the Tequila, Cassis and Lime juice first, adding ice and then topping with Ginger Beer and stirring to combine. Garnish with a Lime wedge.

1 1/2 oz Tequila or Mezcal
1 oz Fresh Lime Juice
3/4 oz Simple Syrup
1/2 oz Red Wine Float
Shake Tequila, Lime juice and Simple Syrup with ice. Strain into chilled glass, carefully float the red wine on top.

Stir the Gins, Cocchi and Bitters with ice, strain into a chilled cocktail glass, top with 2 oz Moscato Sparkling Rose, Garnish with Black Grapes

4 drops of Spiced Apple Bitters

Add all ingredients except the cream and nutmeg to a mixing glass, stir with ice to chill and dilute, strain into a cocktail glass, float a layer of cream on top, garnish with grated nutmeg and a sugared puff pastry tuille.
Brown Butter Fat Washed Rum - Melt 125g unsalted butter until it browns, add to 350ml Dark Rum in a wide mouthed container, seal and leave to infuse at room temperature for 12 hours, then put in freezer. When the butter has solidified, strain off the rum through a coffee filter or cheesecloth.
Spice Infused Amontillado Sherry - Add 1 bag of Mulling Spices to 6 oz of Amontillado Sherry at room temperature for 20 mins or to taste.
Beef Stock Extract - Add one cube of Beef Stock to 1 oz Vodka, let infuse for 20 minutes, strain off solids.
