I am a professional chef with over 30 years of experience cooking in restaurants all over America and the world. I ,like most of you ,took the Standard American Diet and the food pyramid to heart and tried to stick to it. When that did not work ,I would go on fad diet after fad diet, normally it would be another version of a low fat high carb solution. I soon developed insulin resistance, type 2 diabetes, inflammation and a host of digestive issues. After mainstream medicine failed to help me, I turned to research. CARBOHYDRATES TO AVOD
Refined Sugars:
Avoid manmade, processed sugar (e.g. white sugar, high fructose corn syrup, agave, and fruit juice)

Refined Grains:
Refined Grains are not only bad for your blood sugar but they also stop your digestive system from absorbing minerals

Packaged Foods:
Be cautious about consuming of “foods” with labels as these tend to not be a nutrient dense version of the whole food they are from (e.g. chips, cereals, cookies, crackers, prepackaged meals, etc.) 2 Consuming processed foods can lead to more nutrient deficiencies and gastro intestinal distress

While the diets of healthy cultures varied greatly, there were
several commonalities:

They contained no refined or processed foods

They all used some type of animal products, with some raw

Diets were four times higher in calcium and other minerals
and encompassed 10 times the fat‐soluble vitamins than the
modern Western diet

included foods with high enzyme content

Seeds, grains, legumes, and nuts were soaked, sprouted, fermented, 5 or naturally leavened

Fat content varied from 30 to 80% of total calories, but only four 6 percent came from polyunsaturated fatty acids

Diets contained nearly equal amounts of omega‐3 and omega‐6 fatty 7 acids

Diets contained some unrefined salt

Diets made use of bones, usually in bone broths

I have worked in the healthcare industry for over 20 years in emergency medicine, cardiac care, orthopedics, primary care, diabetes education and endocrinology. I have a Bachelors Degree in Nursing, Masters Degree in HealthCare Leadership, Advanced training from the Institute of Lifestyle Medicine at Harvard Medical School, Institute of Functional Medicine, and American Academy of Funtional Medicine.

It was during my time working as a diabetes nurse educator, followed by my role as Director of Diabetes Care and Endocrinology, that I was motivated to be a change agent in the way we treat and manage chronic disease. I was alarmed at the increased prevalence of diabetes and the complex nature and cost of managing the disease. I was inspired by those patients who became partners in their care and with the right support, education, and coaching were empowered to make lifestyle changes that resulted in improved health and happiness. After initiating a "Living Well with Diabetes" series of classes with a local culinary kitchen, where providers, patients, and family members participated in innovative disease management cooking classes, I was determined to bring the science and practice of lifestyle medicine to more people living with a chronic disease or aiming to prevent one. This was the starting point for my change in personal health, passion for lifestyle and functional medicine, and the turning point in my career in healthcare. I realize the important role that nurses serve as they speak the language of medicine, healing, and health.
