In the 8th episode of the SJSU Green Campus podcast, we had the pleasure of speaking with Anne-Marie Bonneau and Mary Mackey, two chefs who prioritize sustainability in their cooking. Anne-Marie Bonneau, also known as the Zero Waste Chef, is an advocate for reducing food waste and living a more sustainable lifestyle. She is renowned for her innovative and tasty recipes, as well as her blog and cookbook, "The Zero Waste Chef," which provides helpful tips and strategies for minimizing food waste in the kitchen. Mary Mackey is a plant-based nutritionist and educator who manages the blog "The Wholesome Vegan." She is committed to promoting a vegan lifestyle by offering nutritious, whole-food-based plant-based recipes, as well as education and tools to assist individuals in transitioning to a plant-based diet.

Ashley graduated from UCSC with a degree in Anthropology and love for the environment, she decided to create this shop in downtown for the community to have access to refill their soaps, detergent, lotions, and so much more.

Episode 2: Tree Knowledge for All with Violet Awwad (Our City Forest)

Join us for our second episode where we talk with Violet Awwad, a California Climate Action Corps fellow serving with the urban forestry non profit, Our City Forest about the importance of trees for our physical and environmental health, along with how you can get involved with Our City Forest.

Guest:

Violet Awwad is a California Climate Action Corps (CCAC) fellow serving with the non-profit Our City Forest. Violet received her Associate of Science degree in Natural Science and Mathematics from Napa Valley College where she transferred to the University of California, Berkeley to study sustainable environmental design and food systems. She has experience in urban agriculture, energy and water efficiency programs, and now urban forestry education. As a California Climate Action Corps fellow with Our City Forest, she is co-operating the Green Silicon Valley Schools program with her co-fellow, Bryan Graybill. Together, they focus on planting trees and shrubs in schools located in historically underserved areas as well as educating the community on the importance of urban forestry on our health, the environment's health, and climate change.

Join us for our premier episode, featuring Heather Duplaisir, a professor at San José State University in the Department of Public Health and Recreation, as she discusses what sustainable tourism is and tips on how to travel sustainably.

Guest:

Heather Duplaisir is a professor at San José State University in the Department of Public Health and Recreation where she has been teaching since 2019. She has a Master of Science in Recreation from San Francisco State University where her focus was on sustainable tourism. Her publications include the textbook: Girling, R., Gordy, H. & Lanier, P. (2016) The Good Company: Sustainability in Hospitality, Tourism and Wine New York, NY: Business Expert Press. As well as the article:  Duplaisir, H., Látková, P., Wilson, J., & Everette, M. (2019).  "Impacts of Participation in Socially Responsible Tourism on Tourist’s Attitudes and Future Behavior: Amazon Watch Journey to Ecuador." Journal of Tourism and Leisure Studies 3 (2): 1-19. She was the winner of the International Award for Excellence for Volume 3 of the Journal of Tourism and Leisure Studies for this article in May 2019. Most recently, she was awarded the Lecturer Faculty Early Career Teaching Award through the CHHS at SJSU 2020 - 2021. She also has an Outdoor Educator Certification awarded by the National Outdoor Leadership School in August 2012. She has spoken at tourism conferences both globally and locally on sustainable tourism.
