Ground Turkey Thai Tacos:
1 lb ground turkey
1 bag salad slaw mix
1 red bell pepper
1 avocado
white corn tortillas
1 bunch cilantro
Oil for cooking
Peanut Sauce:
1/2 cup peanut butter
2 tbsp soy sauce
1 tbsp rice vinegar
1/2 tbsp sesame oil
1-2 tbsp maple syrup
1 tbsp chili garlic sauce
1 tbsp fresh lime juice
2-3 garlic cloves, grated
1 tbsp grated ginger
1-2 tbsp warm water
Thai Spice Mix:
2 tsp paprika
1 tsp turmeric
1 tsp black pepper
1 tsp cumin
1 tsp ground ginger
1/2 tsp cayenne
Salt to taste
Mix the thai spices together in a small bowl.
Heat pan on medium high heat. Add oil and ground turkey to the pan.
Break up the turkey into small crumbles, stirring as it cooks.
Incorporate your spice mix, salting to taste. Remove from heat when turkey is done, about 5-7 mins.
Mix together the peanut sauce and add 1/2 cup to the slaw mix. You can always add more sauce to your liking!
Heat tortillas, if desired.
Slice the avocado and chop the cilantro.
Assemble the tacos! Start with a layer of ground turkey, topping it with the slaw.
Garnish with avocado, cilantro, and a drizzle of peanut sauce. Enjoy!
30: Elevated Boxed Cake and Summer Loves
(I tried to find that scene from Hacks that everyone *must* watch but it's not anywhere online. It is in episode 2 at the 9 minute 57 second mark.)
Elevated Boxed Cake:
Boxed cake mix of your choice
A lot of butter (at least 1 cup, probably)
Milk of your choice (I used almond and it totally worked!)
1/2 Vanilla pudding mix
Eggs
Prepare boxed mix exactly as stated on the package, BUT:
- Replace water with milk
- Add an extra egg
- Replace oil with butter, then double the amount
- Add 1/2 vanilla pudding packet and fresh fruit, chocolate, etc. to spruce her up!

29: Quiche & Getting Astrological with Celine
Happy Pride! Anabel whips up an easy, cheap, and quick quiche before being joined by Celine, her bff of 11+ years, to discuss all things astrology! They cover what "in retrograde" actually means, the difference between your sun, moon, and rising sign, how astrology relates to dating, and so much more! (Celine is so smart y'all) They of course end with their current entertainment recommendations.
Anabel's Quiche:
- 4-6 eggs (depends on how big your pie is)
- 3/4 cup half & half
- 1 red bell pepper
- 1/2 - 1 cup mushrooms
- 3-5 strips cooked bacon
- 1/2 cup feta cheese crumbles
- 1 pie crust, par-baked (a little undercooked)
- salt + pepper to taste
- oil for roasting
- Cut pepper and mushrooms into bite sized chunks. Toss with olive oil, salt, and pepper.
- Assemble on sheet pan and bake at 400F for 20 minutes.
- Chop bacon into bite sized chunks. Set aside.
- Whisk together eggs and half & half, seasoning with s+p.
- After the veggies are done, arrange your cooked veg, bacon, and feta at the bottom of your empty pie crust.
- Carefully pour your egg mixture over the fillings. Top with more cheese if desired.
- Bake at 375F for 30-45 mins (really depends on the size!)
- Check halfway on your crust, covering the edge of your pie in tin foil if needed to prevent burning.
- Let cool for 10 mins and enjoy!

Vegan Sweet Potato Chili:
- 1 sweet potato
- 1 onion
- 1 cup bell pepper (optional)
- 1 can black beans
- 1 can red kidney beans
- 1 can diced fire roasted tomatoes
- 1 quart of veggie broth (1 package)
- 1/4 cup chili powder
- 2 tablespoons cumin
- 1 tbsp. cayenne (optional, if you like it spicy)
- salt & pepper to taste
- olive oil for cooking
- Sautee roughly chopped onion in any oil of your choice until translucent in a large pot.
- Roughly chop peppers, if using them, and add them to pot.
- Poke holes in sweet potato with a fork and microwave for 2-3 mins. Chop into cubes and add to pot. Sautee until they're a bit browned.
- Add the canned beans (strained) and tomatoes, then stir.
- Add enough veggie broth to cover the sweet potatoes.
- Add the seasonings and bring to a boil.
- Reduce to simmer for 30 min-1 hour, adding more veggie broth if it gets too thick.
- Add cheese, avocado, or crushed tortilla chips on top if desired!

26: Garlic Butter Veg & Chickpea Penne and Creator Insecurities with Kyndal
You're in for a treat today! Anabel makes an extremely simple yet very satisfying vegetarian pasta dish. She is then joined by her friend Kyndal, host of Kyndal's Korner podcast, to talk all things creating! They discuss what podcasters/ general creatives should know when starting out, traumatic childhood events they realized affected them later, early 2010's YouTube inspirations, and how they'll know they've finally made it. Take a shot every time Anabel says "admirable!"
Zucchini & chickpea penne with goat cheese and red chili flakes in garlic butter sauce:
- 1 large zucchini
- 1 can chickpeas, water drained
- 1/2 box penne pasta
- 1/2- 1 stick good butter
- 1/4 tsp or 1/2 clove minced garlic
- Goat cheese (topping)
- Red chili flakes (optional but so tasty)
- Olive oil, salt & pepper for cooking
- Preheat oven to 400F. Bring water to a boil for pasta, making sure to salt it.
- Cut zucchini into half moons.
- Drain chickpeas and add them to a sheet pan along with the zucc.
- Coat in olive oil, salt, and pepper. Toss around on sheet to coat.
- Cook in oven for 20~ish min, checking to make sure the chickpeas don't get overdone.
- Add pasta to water and cook 1 minute under the time it says on the box.
- Meanwhile, melt your butter in a saucepan on low heat.
- Once melted, add garlic and cook until light golden brown. Turn off heat as soon as this color is achieved to avoid burning.
- Add cooked pasta, chickpeas, and zucchini to butter sauce. Toss to combine.
- Top with goat cheese, red chili flakes, and cracked black pepper. Enjoy!

Alix Traeger's Crispy Baked Chicken Wings (for non air fryer folks)
Air Fryer Chicken Wings:
- 1 package raw chicken wings
- 1/2 cup corn starch
- 1/2 cup flour
- 1 tsp paprika
- 1 tsp 21 seasoning salute (or multipurpose seasoning)
- 1 tsp cracked black pepper
- salt to taste
- oil for cooking
- Prepare your chicken wings. Using a sharp knife, cut off the wing tip, then find the point of separation between the drum and flat and cut there to separate them.
- Mix corn starch, flour, and seasonings.
- Pat chicken wings dry with a paper towel.
- Coat each wing thoroughly in the dry mixture and set aside on a plate.
- Head over to your air fryer! Arrange the wings in a single layer. Be careful not to overcrowd.
- Air fry at 400F for 23-25 minutes. Times will vary depending on your air fryer, so don't be afraid to check on them/ shake them around about halfway through.
- Once done, coat in the sauce of your choosing and enjoy some crispy wings!

Air Fryer Sweet Potato & Normal Fries
- 1-2 sweet potatoes
- 2-4 russet burbank (or whatever kind!) potatoes
- 1/2 cup olive oil (can substitute other oil)
- 1 tsp paprika
- 2 tsp garlic powder
- 1-2 tsp multi purpose seasoning
- salt + pepper to taste
Tzatziki Dip:
- 1 7oz container plain greek yogurt
- juice of 1/2 lemon
- 1-2 tbsp minced garlic
- 4-5 stalks chopped fresh dill (or 2 tbsp dry dill)
- salt + pepper to taste
- Cut potatoes into fry sized strips. Set aside in large bowl.
- Coat cut potatoes in oil and spices. Season with pepper (wait on the salt).
- Air fry on 400F for 22 minutes. Alternatively, place evenly on a baking sheet and bake at 425F for 45 min - 1 hour, flipping halfway.
- Salt as soon as the fries are hot and ready.
Dip:
- Mix plain greek yogurt with lemon juice, chopped dill, and minced garlic. Season with salt and pepper to taste.
- Refrigerate until ready to eat.

22: Mulled Wine & Holiday Favorites with Anabel
Merry Zingmas! In this episode Anabel makes her lovely mulled wine recipe before recommending her favorite holiday music, TV episodes, and movies. She discusses what you can tell about a person from their favorite christmas song, epic parties of christmas past, and how she's handling seasonal (and normal) depression this magical season. Of course, we always end with current entertainment recommendations!
Anabel's Mulled Wine:
- 1 bottle Shiraz
- 5 cups apple cider
- 3 cups 100% cranberry juice (cran. juice cocktail will make the drink sweeter)
- 1 cup brown sugar
- 2 tbsp cinnamon
- 1 orange
- cloves, cinnamon sticks (optional but recommended)
- 1/3 cup dark liquor of your choice (optional)
- Combine wine, cider, and juice in a large saucepan. Heat on medium.
- Cut decorative slices from orange if desired.
- Add brown sugar, juice of orange, orange slices, and cinnamon.
- Stir and heat. Do NOT boil. Enjoy!

21: Buffalo Cauliflower & Girls with Natalia
Here's a long one for you, folks! Anabel makes her tried and true multiple-times-tested buffalo cauliflower recipe before being joined by her friend Natalia! They tell the story of how they met way back in the day, talk best and worst concerts, which film made them each love movies, and HBO's Girls. How do they feel about being such staunch lovers of the show despite Lena Dunham's constant foot in mouth? What are Natalia's thoughts on being a fan of the series and a person of color, considering it's portrayal of an All White Brooklyn? Listen to see!

Buffalo Cauliflower (Vegetarian):
- 1 head cauliflower
- 1/2 cup unsweetened almond milk (whatever unsweetened milk will work, even water)
- 1/2 cup all purpose flour
- 2 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp baking powder
- 1/2-3/4 cup Frank's Red Hot (or the cayenne pepper hot sauce of your choice)
- 4 tbsp melted butter (use vegan butter to make the recipe vegan!)
- juice of 1/4 lemon salt + pep to taste, oil for greasing pan
- Preheat oven to 450.
- Cut cauliflower head into florets, set aside.
- In a large mixing bowl (bigger the better), combine flour, almond milk, paprika, garlic powder, and pepper. It should be a thin consistency but not too watery.
- Add florets to mixing bowl, toss gently to coat each floret in flour dredge.
- Line 2-3 baking sheets with tin foil and spray with non stick spray.
- Arrange florets spread apart with amble space as not to crowd them.
- Bake for 25-30 mins until just browned.
- Mix Frank's Red Hot, melted butter, and lemon juice. Season to taste.
- Coat or baste each floret with buffalo sauce, coating generously.
- Bake at 450 for an additional 15 mins.
- Top with extra Frank's Red Hot if desired and enjoy!
20: Butternut Squash Chili & Growing Up with Maggie
Long time no Zing! Having gone through many recent life changes, Anabel debriefs regarding adjustments, the 2020 presidential election (!!!!), and homebuilding while making a lovely vegan butternut squash chili. She is then joined by her roommate, Maggie, to discuss their recent move, meeting one another on Facebook, old roommate horror stories, and what makes a good living partner. They end off the episode with entertainment recs as always!

Vegan Butternut Squash Chili:
- 1 yellow onion
- 1 red bell pepper (any color is fine though)
- 2 lb butternut squash, chopped into cubes
- 1 can black beans
- 1 can dark red kidney beans
- 1 can diced fire roasted tomatoes
- 1/2 qt vegetable broth
- 3-4 tbsp chili powder
- 1 tbsp cumin
- 1/2-1 tbsp cayenne (depends how spicy you like it)
- 2 tsp garlic powder
- 2 tsp paprika
- salt + pepper to taste
- olive oil for cooking
- avocado (for garnish, optional but recommended)
- Dice onion and bell pepper, set aside.
- Preheat oven to 400°F. Arrange cubed butternut sqaush on lined and oiled baking sheet. Toss with olive oil, salt + pepper. Bake for 40 min.
- While the butternut squash is baking, begin making the chili by sautéing the onions and peppers in some oil on med-high heat. Cook until onions are translucent and peppers have gone soft, both browned.
- Add canned beans and tomatoes to pot. Stir, then add the veggie broth. If it is too thick still, add more broth as needed.
- Season with the chili power, cayenne, cumin, paprika, and garlic powder.
- Stir and bring to a boil. Once it reaches a boil, let simmer for at least 30 min.
- Once the butternut squash is roasted golden and soft and chili is at desired thickness, add squash to pot and combine the two.
- Season with salt + pepper, and garnish with diced avocado.
19: Breakfast Sandwiches & 2014 Films with Abby
Perfect Breakfast Sandwich:
bread (sandwich bread, bagel, english muffin, the choice is yours)
2-3 slices prosciutto
1 slice white cheddar cheese
2 eggs
handful of spinach
butter (I used Earth Balance vegan butter but your choice)
hot sauce (I used TJ's jalapeno pepper hot sauce)
salt + pep
Heat pan to med high. Add in slices of prosciutto and crisp until slightly brown. Remove from pan and set aside on warm plate.
Grease your pan before adding two scrambled eggs, topping with a handful of spinach. Cover pan with lid to steam.
After a minute or so, flip the egg "omelette" and remove from pan. Season with salt + pep. Keep warm with prosciutto.
Fold egg into desired patty shape (whatever will fit on the bread you're using) and put the cheese in between the egg fold for maximum meltage.
Spread butter on each open side of your english muffin (or bread) and toast in pan until golden brown.
Assemble your sandwich! Add the egg patty, cheese, and prosciutto to your bread of choice.
Add hot sauce if desired and enjoy!

Vegetarian Pesto Rotini w/ Roasted Squash and Smashed Chickpeas
Ingredients:
- 1/2 box rotini pasta
- 1-3 squash (depending on size)
- olive oil for cooking
- 1 can chickpeas
- salt + pepper to taste, 21 seasoning salute (optional)
For Pesto:
- 1-2 cups basil leaves
- 1-2 cups spinach
- 2 cloves garlic
- 1/2 cup walnuts
- 1/2 cup parmesan cheese
- juice of 1/2-1 lemon
- 1/2-3/4 cup olive oil
- salt + pepper to taste
- Preheat oven to 400 F.
- Slice squash into half moons, toss with olive oil + seasonings on one half of baking sheet
- On the other half, toss one can chickpeas with olive oil + seasonings. Put in oven for 15-20 mins.
- Boil water for pasta. Salt. Add pasta once boiling.
- Make your pesto! Add basil, spinach, garlic, walnuts, lemon juice, parmesan, and olive oil to blender or food processor. Blend until smooth. Add salt + pepper to taste.
- Drain pasta after required time boiling is done. Take squash and chickpeas out of oven.
- Using large fork, smash chickpeas until slightly crumbly.
- Mix your pasta, pesto, squash, and smashed chickpeas together. Top with more parmesan and freshly cracked black pepper.

12: Cherry Bread Pudding with Anna
Anabel makes cherry bread pudding and chats with herself about men at the gym, what makes a good dessert, and mental health. Then her friend Anna joins to talk about vegetarianism, their favorite sparkling water flavors, and college memories.
Cherry Bread Pudding:
Pudding:
- 1 medium sourdough loaf, cut into cubes (or any hard loaf) (can be old)
- 1/2 cup brown sugar
- 1/2 cup white sugar + some sprinkled on top
- 1 cup unsweetened almond milk
- 1 egg + 2 yolks (3 total)
- 1 tbsp cinnamon
- 1/2 tbsp vanilla (optional because vanilla is $$)
Cherry Sauce:
- 1/2-1 bag frozen pitted cherries
- ~1 cup white sugar (depends how sweet you want it)
- Preheat oven to 350.
- Assemble bread cubes in baking dish. Pack semi-densely.
- Beat brown sugar, white sugar, almond milk, cinnamon and eggs. Whisk the custard until combined.
- Pour wet custard mixture over bread cubes, making sure each one is saturated. Pouring in stages helps!
- Let bread sit for a few minutes to absorb custard, pour out excess from dish if needed.
- Bake for 40-45 minutes.
- Heat frozen cherries, sugar, and a splash of water over high heat. Bring to boil for 10 mins, let reduce until desired thickness. It will get thicker as it dries.
- Let pudding cool for a few minutes before serving with a generous pour of sauce on top! Enjoy!

11: Keto Ziti (Zito) with Lexi
It's keto time! Anabel is joined by her friend Lexi to eat a DELICIOUS keto dish (seriously... make this one, guys) and talk about what exactly eating keto entails, intermittent fasting, and why Anabel can't eat normal jarred pasta sauce anymore.

Keto Ziti (Zito):
- 2 zucchini
- 1 red bell pepper
- 1 pound italian pork sausage
- 1/2- 1 jar red sauce (use whatever brand you like or go crazy and make homemade)
- 1 bag shredded mozzarella cheese (or go crazy and use a ball of fresh mozz!)
- salt + pep, italian seasoning (optional)
- Heat oven to 400.
- Slice zucchini into half-moons and peppers into thin strips.
- Arrange veggies on sheet pan, season with salt + pep. Bake for 30-35 mins, until roasted and brown.
- Heat pan over med-high and add sausage. Cook in small pieces until cooked fully, season with salt + pep.
- Mix roasted veg, cooked sausage, and red sauce in baking dish.
- Top with mozzarella and bake for additional 10 minutes.
- Serve and enjoy!

10: Vegan Tacos with Amanda
Anabel makes vegan tacos! She is then joined by her friend Amanda, a real life vegan, to talk sustainability, their best scams, and go-to easy meals.
Roasted Squash Tacos
- 1-2 yellow squashes
- 1 onion
- 1 pepper (color is your choice)
- 1 can black beans
- flour tortillas (or your pref)
- 1 avocado
- 1 lime
- 2 tbsp 21 seasoning salute (or use all purpose seasoning)
- 2 tbsp chili lime seasoning (chili powder works too)
- salt + pepper to taste
- olive oil
- cut up squash into cubes and dress with olive oil, 21 seasoning salute, salt + pepper
- put into oven at 400 for ~30 mins
- cut onion and pepper into strips and sautee on high heat. cover with lid to steam and add salt, pepper, and olive oil to taste
- add black beans to small saucepan on low-med heat and add chili lime seasoning, salt + pepper, and even lime to taste
- cut avocado into cubes and mix with salt, pepper, and lime juice. mash into guac of your desired chunkiness
- heat flour tortillas and arrange your vegan tacos!!

Anabel makes what she has dubbed "a show stopping breakfast," which is just sweet potato hashbrowns topped with a fried egg, avocado, and chili oil honey. Yum alert! Then she is joined by Abby and they discuss their favorite movies, TV, music, books, and podcasts of 2019. Happy 2020 to you all!
A Show Stopping Breakfast (vegetarian):
- 2 eggs
- 1/2 sweet potato
- 1 avocado
- chili garlic sauce (or chili oil or even sriracha)
- honey
- salt + pepper to taste
- butter for frying egg
- grate sweet potato until you have about 1 cup for each hash brown.
- put grated sweet potato into a large heated pan. use butter or cooking spray and shape potato into patties. wait a few minutes and then flip when the first side is golden brown.
- In a smaller pan, heat butter and fry an egg to your liking.
- cut avocado into slices
- mix chili garlic sauce with honey using a 1:1 ratio
- Plate and enjoy!

7: Minestrone with Katie

Vegan Minestrone
- 1 onion, chopped
- chopped carrots
- chopped butternut squash
- 1 can red kidney beans
- 1 can fire roasted tomatoes
- 1/2 package frozen spinach
- 1 carton veggie broth
- bay leaf
- salt & pepper to taste
- olive oil for sauteeing
- Roast butternut squash and carrots tossed in olive oil and salt and pepper at 425 for 30 minutes
- Sautee onion until browned
- Add 3/4 carton (or as much to your taste) veggie broth
- Add canned beans and tomatoes
- Add roasted veggies
- Add spinach, thawed. Try to squeeze as much water out as you can
- Add bay leaf
- Bring to a boil, then simmer for 10 minutes
- Season with salt and pepper to taste!

5: Halloween Spooktacular: Burrito Bowls With Josef
Anabel makes burrito bowls! (Don't worry, they're vegan) Then, she is joined by her friend Josef to talk all things horror movies. Things get a little gory in their descriptions... you've been warned. Happy Halloween!
Vegan Burrito Bowls:
- 1 white onion
- 1 bell pepper (color is your choice)
- 1 can black beans
- 1 can sweet corn
- cooked brown rice (I use TJ's steam-in-bag brown rice)
- 1 avocado
- 1 lime
- salsa, hot sauce (optional)
- salt + pep, taco seasoning
- olive oil for cooking
- Cut onion and bell pepper into strips. Season with taco seasoning and salt + pep, sautée on med-high heat until charred and soft, about 7-10 mins.
- Heat corn in small saucepan in 1-2 tbsp olive oil on high heat. Pat corn into flat even layer, cover with lid. Cook for ~10 mins until fire roasted, char is optional.
- Make brown rice however you so choose. I use TJ's steam-in-bag brown rice.
- Heat black beans in small pot, season with salt + pep taco seasoning, chili powder, lime (optional but tasty)
- Cut avocado into cubes and mix gently with lime juice and salt + pep (to taste) to make your guac!
- Assemble! Start with a base of brown rice, then add fajita veggies, corn, and black beans. Top with guac and salsa!

4: Veggie Soup With Celine + Bonus Fast Food Vegan Adventure!
Anabel makes a veggie soup perfect for fall. She's then joined by Celine, her best friend of 10 years, to talk all things friendship, pizza toppings, and 2010 antics.
Listen for a bonus segment where Anabel and Caroline eat vegan fast food.
Vegetable Soup (vegan):
- 1 quart vegetable stock
- 4-5 small gold potatoes (approx 1 lb)
- celery
- carrot
- onion
- herbs (parsley, rosemary, thyme)
- raw green beans, snapped in half with ends removed
- 1 head cauliflower (or one bag steam-in-bag cauliflower)
- 1 bay leaf
- salt + pep, 21 seasoning salute (or all purpose seasoning)
- olive oil for cooking
- Start off by roasting your cauliflower. If using frozen, microwave for 2 minutes first. Toss cauliflower with olive oil, season with salt + pep + 21ss. Roast at 400 for ~15 mins.
- Chop potatoes into bite sized chunks. Dice celery, onion, and carrot, or be like me and buy the pre-chopped kind. (But really we should be cutting our own to not buy single-use plastics)
- Heat large soup pot with 2 tbsp olive oil. Add diced celery, onion, and carrot (mirepoix) and stir, letting sauté until soft and onions are translucent.
- Add potatoes and snapped green beans to pot, letting cook for 3-4 mins.
- Add veggie stock to pot, bring to a boil.
- Once boiling, reduce to simmer and leave for ~40 mins.
- Add cauliflower in last 10 minutes of cooking as to not let it get mushy.
- Season with salt + pep to taste, then serve with warm bread!

3: Curry with Caroline
Anabel makes vegan curry and has a sinus infection. Then she and Caroline talk about drugs, the universe, and painting elephants.
Vegan Vegetable Curry:
- 1 yellow onion
- 3 russet potatoes
- 2 bell peppers (color is your choice)
- 1 clove garlic
- 1 package mushrooms
- cooked brown rice
- garam masala powder
- curry power
- turmeric
- cumin
- coconut oil for cooking
- 1/2 can coconut milk
- salt + pep
- cilantro or coriander for garnish (optional)
- Boil pot of water, season with salt.
- Chop potatoes into home fries sized pieces. Boil until fork tender, about 15 minutes
- Chop yellow onion into strips.
- Heat saucepan on med-high heat with 1-2 tbsp coconut oil. Throw onions in, let sweat for a few minutes.
- Chop peppers into strips; mince garlic; slice mushrooms
- Add garlic to pan (DO NOT BURN) along with 4 tsp each of garam masala powder and curry powder. Add more coconut oil as needed.
- Add peppers and sliced mushrooms to pan
- Season with 1 tsp each of turmeric and cumin. Adjust seasoning to taste, add more if you want it extra flavorful!
- Let veggies sauté in spices until cooked fully with some color.
- Add approx 1/2 can coconut milk, stir all together.
- Let reduce for ~10 mins, season with salt + pep
- Serve with brown rice and enjoy! Top with chopped cilantro to be extra fancy.

2: Fried Rice with Abby
Anabel makes fried rice and then her and Abby talk about Sex and The City for too long.
Vegetarian Fried Rice:
- 2 eggs
- butter (I use earth balance vegan butter)
- 1/2 bag trader joe's frozen asian style veggies (or tbh use whatever veggies you have. broccoli, red pepper, onions, water chestnuts, corn, really whatever would be yummy)
- cooked rice (make it however you/ use whatever rice you want, I like TJ's steam-in-bag brown rice)
- 1/2 cup soy sauce (or to taste)
- a few dashes rice vinegar
- dash sesame oil
- salt & pepper to taste
- sriracha, avocado, sesame seeds (or everything bagel seasoning), nori furikake (dried seaweed strips) to top (OPTIONAL but tasty)
- In a large pan, scramble two eggs in butter, undercooking slightly. Set aside in a bowl.
- Add veggies over med-high heat and sautée until tender/ unfrozen. Add cooked rice and egg.
- Add soy sauce, rice vinegar, and sesame oil. Stir.
- Add a pat of butter if desired (super yummy). Season with salt & pepper.
- Serve and add desired toppings!
